Cheddar Herb Sourdough by @cookim_mama 🧀🌿 This was a fun one to make – recipe below! 280g white bread flour 20g khorasan flour 240g water (80% hydration) 60g peaked sourdough starter (20% levain) 7g salt (2%) 50-60g cheddar cheese cubed (~18%) dried herb blend (basil, oregano, parsley) unmeasured 1. Prepare your starter the night before 2. The next morning, mix the flour and water (reserving 20g of water for step 3). Autolyse for at least 1hour or until your starter is ready 3. Add the levain. Mix. Add the salt and remaining water. Mix and perform slap and folds until the dough is smooth and everything is well combined 4. Cover and let the dough rest for 30mins. Then give the dough 2 sets of stretch and folds, each ~30-45mins apart 5. Laminate the dough to incorporate the cheese and dried herbs 6. Continue to bulk ferment and perform coil folds roughly every hour until the dough is ready (I did 2 rounds) 7. Shape the dough and place it into a banneton. Cover and place it into the fridge for an overnight cold proof. Mine was 16hrs 8. The next morning, score and bake at 500F for 20mins in a dutch oven with the lid on, 22mins at 450F lid off (times may vary based on the size of your loaf). Mango Sticky Rice Rolls by @eatingwithkirby 🥭 Get the recipe below! 2 ripe mango 1 cup glutinous rice 1 cup water 3 tbsp sugar 1/2 cup coconut milk 1/2 cup coconut cream (top of the coconut milk) sprinkle of sesame oil 4 pcs rice paper 1. In a medium bowl, soak your glutinous rice in room temp water for 30 minutes. Then wash the rice a few times and either cook it in the rice cooker or on the stove in a pot. If using the stove, pour 1 cup of water on the glutinous rice and turn heat on high. Once bubbling, close the lid and simmer until the water has been fully absorbed (roughly 12-15 minutes). 2. Open a can of full fat coconut milk, and skim the top layer of coconut cream into a small bowl. Use that as a dipping sauce for the rolls later! 3. Pour 1/2 cup of the coconut milk into a sauce pan and add sugar. Stir until dissolved and coconut milk is heated thoroughly. 4. Once rice is fully cooked, pour hot coconut milk over the sticky rice and mix well. Leave covered for 20 minutes so the milk gets fully absorbed into the rice. 5. Quickly dip rice paper sheets into a shall bowl of warm water and lay flat on a large plate. Add sesame seeds, followed by mango, then sticky rice. Fold in the sides, then fold up from the bottom. Roll up completely until it is wrapped like a burrito. 6. Baked Feta Eggs by @feelgoodfoodie 🍳 A fun way to make scrambled eggs in the oven, and the feta makes it creamy, fluffy and so good!  INGREDIENTS Avocado oil spray 8 ounce block feta cheese 12 eggs 2 tablespoons extra virgin olive oil ¼ teaspoon salt ¼ teaspoon black pepper Fresh mint leaves, for serving Pita bread, for serving INSTRUCTIONS 1. Preheat oven to 400°F. Grease an 8x11 baking dish. 2. Place the feta block in the middle of the prepared baking dish. Crack 12 eggs around the feta cheese. Drizzle the olive oil on top of the feta and eggs. Season the eggs with salt. Season the eggs and feta with the black pepper.  3. Bake in the preheated oven for 18-22 minutes, until the feta cheese melts and the egg whites around the cook. 4. Use a fork to scramble the eggs and feta together. Don’t worry if some of the whites still look wet as they will continue cooking from the heat of the baking dish and surrounding eggs. 5.
