Apple + Butternut Squash Bruschetta This apple and butternut squash bruschetta is the perfect holiday appetizer. It’s so delicious, super easy to prep, and sure to be a crowd pleaser! Make sure to save this one for later! Apple and Butternut Squash Bruschetta: 1-2 cups chopped butternut squash 1 large apple chopped 1 Tbsp oil of choice ( I used vanilla bean ghee) 1/4 cup diced red onions 1 1/2 tsp Apple pie seasoning 1/4 tsp salt + a pinch for toast Pinch of ground pepper 1-2 Tbsp water 2 Tbsp pomegranate seeds 1-2 Tbsp balsamic glaze 3 Tbsp chopped sage (reserve some for garnish) French baguette (substitute favorite gluten free bread) 4 oz Goat cheese ( substitute spreadable dairy free cheese) Instructions: 1. Chop your butternut squash and apples into bite size pieces (make sure all pieces are even to allow for even cooking) 2. Add 1 Tbsp ghee or oil to pan on medium heat and warm until melted (about 10 seconds) 3. Add diced red onion, chopped sage, salt + pepper, sauté for 5 minutes 4. Add minced garlic and sauté for a minute 5. Add the butternut squash and sauté 5 minutes on medium heat 6. Then add the chopped apples, apple pie seasoning, mix, and sauté for 5-7 minutes 7. To speed up the process add 1-2 Tbsp of water to steam it all a bit, and mix 8. Slice your bread, brush with some olive oil, flakey salt, and bake 400 F for 5 minutes 9. Spread some goat cheese to each slice of toasted bread 10. Top with the apple and butternut squash bruschetta 11. Sprinkle with some fresh sage and pomegranate 12. Drizzle with balsamic glaze . .
