Mushroom and spinach, creamy gnocchi pasta  Mushroom: 1. 1 tablespoon olive oil  2. 1 tablespoon butter  3. 16 oz mushroom ( I used baby Bella's )  4. 1 teaspoon salt and pepper  Gnocchi: 1. 16 oz Uncooked gnocchi  2. 1 tablespoon olive oil  3. 5 garlic minced  4. 1/2 cup broth - chicken or vegetable  5. 1 cup heavy whipping cream  6. 1/2 teaspoon oregano, paprika, salt  7. 2 handfuls spinach  8. 1/2-1 teaspoons chili flakes  1. Add olive oil and butter to a pan . add mushrooms and sauté seasoning with salt, black pepper. Cook until golden about 5 minutes in medium heat and remove half of the mushrooms and reserve.  2. Add 1 tablespoon of olive oil if needed to remaining mushrooms ,  adding the garlic sauté for 30 seconds on low medium heat.  3. Add an uncooked gnocchi, broth, heavy whipping cream, salt, oregano, paprika. Mix and cover. 4. Cook covered with a lid for three minutes on medium low heat.  5. Uncover add spinach mix well let everything come together for one to two minutes then top with the remaining mushrooms and sprinkle chili flakes. serve while hot.  6. Chicken Fajitas with Cheesy Charred Tortillas  1. 2 chicken breast cut into strips  2. Small Red, yellow, orange , green bell peppers cut into strips . 1/2 onion cut into strips  3. Fajita tortillas  4. 2 cups shredded cheese  5. Garnishes - guacamole, jalapeño slices, sour cream , hot sauce , chipotle mayo , cilantro  Chicken and peppers seasoning:  1. Juice of one lime  2. 2 tablespoons cumin  3. 1 teaspoon onion powder, paprika, oregano, salt , chili powder  4. 1/2 teaspoons cayenne  5. 2 tablespoons water  6. 2 tablespoons olive oil  1. Cut peppers, onion into slices 2. Cut chicken breast lengthwise, then into strips, not too thick, not too thin.  3. Mix seasoning in a bowl 4. Season chicken with 2 to 3 tablespoons of the seasoning reserve some seasoning for the peppers 5. In a skillet add 2 tablespoon of olive oil and 1 tablespoon butter and cook and seer the chicken 3 to 4 minutes without over cooking the chicken. Remove to a bowl. 6. In the same pan, sauté peppers and onion . Add 1-2 tablespoons of the reserved seasoning. Cook about 2 to 3 minutes. Remove  7. Char the tortilla. Melt cheese in a pan top with the tortilla while turning so that the cheese sticks to the tortilla. 8. Once the cheese is melted, flip the tortilla over. 9. Assemble your fajita with chicken peppers, guacamole, sour cream, jalapeños, and cilantro. One chicken breast butterfly and pound out to a thinner cutlet .  2. 2 teaspoons olive oil for chicken  3. 1/2 teaspoon salt , black pepper, onion powder, garlic powder, paprika, cayenne, oregano  4. 2 eggs mixed  5. 1 cup Italian panko - season with 1/2 teaspoon chili flakes , 2 tablespoons Parmesan cheese and 1 teaspoon parsley  6. 2 cups marinara ( I used Rao's arribiata )  7. 2 cup mozzarella shredded cheese  8. 2 cups neutral oil like canola or vegetable oil for frying the chicken .  9. Parsley and chili flakes for garnish.  1. 1. Butterfly chicken by cutting lengthwise and then pound out to 1/4 inch thickness (eyeball it) 2. In a plate mix salt, black pepper, onion powder, garlic powder, oregano, paprika, cayenne . Mix  3. Season chicken with olive oil and 2-3 teaspoon seasoning front and back of chicken . Season generously so it taste good !  4. Mix 2 g eggs for dredging and season the panko bread crumbs with chili flakes, Parmesan cheese and parsley.  5. Coat the chicken in the egg mix and then the panko bread crumbs. Coat it well by pressing down .  6. Heat up the oil and shallow fry the chicken on medium- low heat for at least 2-3 minutes each side . Cook on low medium heat so you don't burn the outside and raw chicken inside you want it to cook evenly. The set aside on paper napkin.  7. In a nonstick pan so that the sauce can slide easily heat up your sauce on low heat. Sprinkle your cheese over the entire pan of sauce and once it is melted to your liking slowly, pour it over the chicken and serve immediately. Buttery Chicken Skewers  Delicious, juicy , moist and easy !  Chicken marinade:  1. 1.5 lbs chicken breast  2. 1/2 teaspoon salt , black pepper, onion powder  3. 1 teaspoon garlic powder, parsley, cayenne  4. 2 teaspoons paprika  5. 1 tablespoon mayonnaise  6. 1 tablespoon tomato paste  7. 1 tablespoon olive oil  Butter sauce- mix  2-3 tablespoons butter  1 tablespoon chopped fresh parsley  1 teaspoon paprika  1. Soak wooden skewers if using in hot water for 20 minutes.  2. Cut chicken into cubes and season . Mix well.  3. Thread on to skewers.  4. Spray pan spray on the bottom of your air fryer basket.  5. Air fry or oven bake at 390 degrees F for ONLY 11-12 minutes . Flip half way through.  If you cook longer chicken will be dry. Oven baking at 400 F for 13-14 minutes. 6. Mix, butter, parsley, and paprika.  7. Brush the butter onto the chicken while hot.  8. Chipotle Chicken & Cilantro Crema over Yellow Rice  1. 4 cups cooked yellow rice  2. 1-2 chicken breast butterfly cut lengthwise  Chipotle seasoning: mix  1. 1/4 cup chipotle adobo sauce  2. 1 tablespoon honey  3. 1 tablespoon olive oil  4. 1-2 tablespoons cilantro chopped  5. 1/2 teaspoon cumin , garlic powder  6. 1/4 teaspoon salt and pepper  Cilantro Crema  1. 1 cup sour cream  2. 1 bundle cilantro washed steams trimmed ( about a cup ) 3. 1 jalapeño more if you like spicy  4.  1 tablespoon lime juice  5. 1/4 teaspoon salt and pepper  1. Make the yellow rice . I used  seasoned yellow rice by Vigo sold in the rice or Mexican food isle .  2. Make cilantro creama and refrigerate until ready to serve  3. Butterfly chicken breast. Cut lengthwise.  4. Season with chipotle adobo sauce, and reserve some marinade for brushing in after cooked. You can marinade or use right away.  5. Sear and cook chicken 3 minutes on each side  in olive oil.  6. Season chicken and season all purpose flour.  2. dredge chicken in seasoned all purpose flour.  3. Cut your peppers and onions, mince your garlic.  4. Cook your pasta 4-5 minutes only and set.  5. In a large skillet, do the water test once the skillet is hot enough add oil so it becomes nonstick and cook  chicken 2 to 3 minutes on each side.  Remove chicken.  6. In the same pan, add one tablespoon of olive oil and sauté the peppers and onions for 2 to 3 minutes until soft. Add in the butter and garlic cook for another minute and combine everything. 7. Let the sauce thicken by adding a teaspoon of cornstarch and mix, and it will thicken the sauce.  9. Add in the pasta. Mix and coat with sauce.  10. Chorizo Chicken spinach Rigatoni pasta  1. 8 oz pasta rigatoni  2. 5 oz chorizo sliced  3. 1 pound chicken pieces ( I used 2 chicken thighs) 4. 2 tablespoons olive oil  5. 1/2 onion diced  6. 5 garlic minced 7. 2 heaping tablespoons tomato paste  8. 1 teaspoon salt , oregano, paprika , 1/2 teaspoon black pepper,  9. 1 cup pasta water  10. 1 cup heavy whipping cream  11. 2 handfuls spinach  12. Garnish- Parmesan cheese, chili flakes, parsley  1. Cook, pasta and salt, water, reserving one cup of pasta water 2. Sliced chorizo and chicken into small pieces, dice onion, and minced garlic 3. Add a tablespoon of olive oil and cook chorizo slices after one minute add in  your chicken and cook 3 to 4 minutes until chicken is cooked.  4. Add tomato paste, salt, oregano, black pepper, pasta, water, heavy, whipping cream, mix.  5. Add in pasta, spinach mix and let everything come together.  6. Once the sauce has thick conductor a few minutes sprinkle with Parmesan cheese, parsley, and chili flakes.
