Chicken Fajitas with Cheesy Charred Tortillas 1. 2 chicken breast cut into strips 2. Small Red, yellow, orange , green bell peppers cut into strips . 1/2 onion cut into strips 3. Fajita tortillas 4. 2 cups shredded cheese 5. Garnishes - guacamole, jalapeño slices, sour cream , hot sauce , chipotle mayo , cilantro Chicken and peppers seasoning: 1. Juice of one lime 2. 2 tablespoons cumin 3. 1 teaspoon onion powder, paprika, oregano, salt , chili powder 4. 1/2 teaspoons cayenne 5. 2 tablespoons water 6. 2 tablespoons olive oil 1. Cut peppers, onion into slices 2. Cut chicken breast lengthwise, then into strips, not too thick, not too thin. 3. Mix seasoning in a bowl 4. Season chicken with 2 to 3 tablespoons of the seasoning reserve some seasoning for the peppers 5. In a skillet add 2 tablespoon of olive oil and 1 tablespoon butter and cook and seer the chicken 3 to 4 minutes without over cooking the chicken. Remove to a bowl. 6.
