🌿 Dreaming of a garden that feeds your family fresh all summer AND fills your pantry for winter? Here’s what you need to focus on: 
1️⃣ Plan for Quantity – Know how much your family eats fresh AND what you want preserved. Decide how much fresh produce your family needs each week AND how much you want preserved. Start with the right number of plants to meet those goals. 
2️⃣ Choose the Right Crops – Tomatoes, beans, and carrots are preserving rockstars. Some crops, like tomatoes, beans, and carrots, are excellent for preserving. Prioritize these if winter storage is your goal. 
3️⃣ Master Bulk Planting – When you’re planting specifically for a preserved food you need to plant a lot of it all at once so you can can it all at once. This saves time in the canning kitchen. As for fresh eating, use what you want, preserve the rest. You can also utilize succession planting to keep your fresh harvests growing. 4️⃣ Write it out — Figure out what you’re using for fresh eating and how much, and what you’re using for preserving and how you’re preserving it. Also take note if you’re doing a secondary preservation. For example, onions store well for months at a time. Your first preservation method would be dry storage but your second method could be chopping up and freeze dry once they are on their way out.
