Here are some fun facts: ✨chicken feet are packed with collagen & gelatin which is known to support - skin elasticity (reduced appearance of wrinkles) - joint health - healthy gut lining - reduced inflammation ✨eating chicken feet is a great way to eat nose to tail and reduce food waste & honor the animal ✨this is not an original or new way of eating at all. chicken feet are widely consumed as a snack in so many different cultures and cuisines - East & SE Asia, Africa, Carribean, etc. This recipe is inspired by Chinese braised chicken feet you might find at dim sum. I love them so much but can never find a GF version, so here’s how I make my non traditional version. 👇here’s the recipe! * 2 lbs chicken feet * Filtered water * 1 tbsp sea salt * 1 cup organic tamari * 1-2 tsp sichuan peppercorns (optional) * 2-3 star anise pods * 7 cloves garlic, peeled and smashed * 3-inch piece ginger, roughly chopped * 1 tbsp local raw honey * Chopped scallions, for serving 1️⃣Add the trimmed feet to a large pot and blanch with water & sea salt. Drain the water and rinse the chicken feet well. 2️⃣Add the rinsed chicken feet to the pot with organic tamari, 4 cups filtered water, sichuan peppercorns, star anise, garlic, ginger, and honey. 3️⃣Bring to a simmer, cover and let cook for 1 ½ to 2 hours, or until the chicken feet are tender and the flavors have developed.
