MIEN GA | vietnamese chicken glass noodle soup 🐓🍜 SAVE THIS RECIPE BELOW ⬇️⬇️ Mien ga is one of my favorite vietnamese noodle soup dishes and it's so so easy to make! In this version I show you how to use chicken thighs instead so you don't have to worry about dealing with an entire chicken! This is the only chicken noodle soup recipe you'll need. Once you have this broth down you can use this right away or store it in the freezer to use with anything! (ɔ◔‿◔)ɔ Ingredients ♥ 1 whole leek (halved) ♥ 6-8 chicken thighs (deboned, separate the thighs + bones) ♥ 1 whole sliced ginger ♥ 1 tbs shaoxing wine ♥ 1 tbs salt ♥ 2 tbs chicken bullion ♥ 2 tbs fish sauce ♥ 1 tbs sugar ♥ 8 -10 cups of water Instructions ( ˘▽˘)っ♨ 1) Bring a pot of water and add in all the ingredients listed above 2) When water starts to boil skim any scum that may rise to the top of the broth while the chicken is cooking 3) Once most of the scum is gone, cover the pot, turn off the fire and let the chicken poach for 25- 30 mins. Important: Do NOT open to the lid during this time. 4) After 25 - 30 mins, remove the chicken thighs into a ice bath and simmer the remainder of the chicken bones for another 45 minutes. 5) Remove leeks and any scums and put your broth through a strainer 6) Taste and adjust for your liking with fish sauce, salt, and/or sugar
