CRISPY OVEN-BAKED TACOS🌮💃🏽 were a HIT with y’all in 2024, & they’re most definitely a staple recipe I’ll be taking into the New Year! These truly were a go-to, easy, & nutritious dinner I made on repeat aaaand also happen to be a part of my Meals My Husband Loves series in case you need some significant-other-friendly recipe inspo😘. SAVE these to make yourself in 2025! 👇🏼👇🏼👇🏼 CRIPSY OVEN-BAKED TACOS 2 tbsp avocado oil 1 pound ground beef (or chicken) ½ medium onion, diced 3 cloves garlic, minced 1-2 cans (4.5-ounce) green @hatchchileco (or a can of @roteltomatoes works great) 1 packet taco seasoning (I love @sietefoods ) Salt & pepper to taste 1/3 cup fresh cilantro juice of 1/2 lime 1 ½ cups shredded cheddar cheese (or Mexican cheese blend) 8 tortillas (I found corn broke more easily, so I used flour) Sour cream (or Greek yogurt), avocado, salsa, etc. to serve 1. Preheat oven to 425 degrees. Line a sheet pan with parchment paper, & lightly spray with non-stick cooking spray. 2. Add 1 tablespoon avocado oil to a large pan or cast iron skillet over medium-high heat. Add onion and a pinch of salt and pepper, and cook for 3-4 minutes, until onion softens. 3. Add ground beef and garlic. Cook for another several minutes, until beef is cooked through. 4. Add in green chiles, taco seasoning, salt and pepper. Mix to combine. Reduce to low heat. 5. Add in cilantro, lime juice, and 1 cup of the cheese. Stir to combine and melt. 6. Place tortillas on prepared baking sheet. 7. Add a few spoonfuls of taco meat to each tortilla, covering just one half. 8. Cover meat with an additional sprinkle of cheese (this acts as your “glue” to keep it all together). 9. Fold the other half of each tortilla over and press gently to seal. 10. Brush the tops of the tortillas with the rest of your avocado oil to help them crisp up. 11. Bake until golden and crispy, about 12-15 minutes. 12. Serve with toppings of your choice, and enjoy! xx
