How to make Birotes Salados, Part 1 🥖 If you’ve been following me for a while, then you know how important this recipe is to me 🥹 I know I can’t replicate the birote 100% (due to difference in climate, ingredients, etc), but I really gave it my all to try to get it as close as possible. My dad, a birote connoisseur, rejected so many of my test batches. Finally, this one got his approval and he said they reminded him of Guadalajara, where these iconic sourdough rolls originated! Now he asks me to make some every time we visit each other. I have never had to split a recipe into parts so I’m really sorry I had to do that, but I just couldn’t fit it all in one video. There will be 4 parts: 1. Levain 2. Final Dough/Bulk Fermentation Process 3. Shaping/Proofing 4.
