Sweet, yummy and easy on the stomach. I could eat a pot of this for breakfast or a late evening snack! Porridge is the best and I’m in love with this recipe Ingredients 2 Green plantains Sugar Salt Lime Rinds Cinnamon Star anise Nutmeg Evaporated Milk Vanilla and/or almond essence Start off by washing and cutting the ends off the plantains. Remove dark spots and cut down the skin along the grooves of the plantain. Remove as much skin as you’d like. Cut the plantains into smaller pieces. Add to a blender along with enough water to cover 3/4s of the way. Blend on medium speed until the consistency is fine. In a pot add 6 cups of water along with 1 tablespoon of salt, a couple cinnamon sticks, star anise and a lime rind. Set to medium temperature and bring to a boil. Then add in the puréed plantain mixture and set the temperature to low. Allow this to boil and cook on low for at least ten minutes. Plantain mixture should thicken and stick to the spoon. Add in 1/3 cup of sugar, one can of evaporated milk and stir on low heat very well to blend in the milk and sugar. Next add one tablespoon of cinnamon, almond essence, vanilla extract and one teaspoon of nutmeg. Mix very well and allow this to cook for 3-5 more minutes. Turn off the heat and allow to sit for 3-5 minutes before serving. Bon Appetite

✨SOMETHINGS BIG just happened.✨ I posted this week about the diaspora helping the city of Cap-Haïtien address their trash problem and over 250 of you responded with your emails, ready for a meeting. Tonight we had this meeting and the room was FILLED. After 100 people Zoom wouldn’t let more people join. I am SO SORRY if you’re one of the individuals who couldn’t join the room. I’m so VERY SORRY! 🥺 I’m trying to figure out how to resolve the issue. I cried twice in the meeting just seeing how eager our people are for change. And by the end of the meeting we had someone commit to providing 1,000 boots for the community to pick up trash. And they offered an 8,000 square foot warehouse to hold equipment. Additionally, @fredjosephjr from @avivaautv reaffirmed his willingness to free of charge let the city borrow his expensive equipment (a backhoe loader, a dump truck and other materials). We are off to a great start. We made it clear that the diaspora is not coming in the save the day. We are coming in to work alongside our brothers and sisters in Haiti who have already been doing the work to change our situation. This initiative will not clear up all of the trash but we believe it will help our people rale yon souf. We need a lot of equipment and support (help with shipping, funding to help repair some equipment already in Okap but out of service). Please consider joining this movement.
