Apple Hand Pies Recipe Ingredients For the Pie Crust: 2 ½ cups all-purpose flour 1 tsp salt 1 tsp sugar 1 cup unsalted butter, cold and diced 6-8 tbsp ice-cold water For the Filling: 3 medium apples, peeled, cored, and diced ½ cup brown sugar 1 tbsp granulated sugar 1 tbsp lime juice (about half a lime) ½ tsp vanilla extract 1 tsp cinnamon (optional) For Assembly: 1 large egg, beaten with 1 tbsp water (egg wash) Instructions 1. Make the Pie Crust: In a large bowl, mix flour, salt, and sugar. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add ice-cold water, 1 tbsp at a time, mixing gently until the dough holds together. Divide the dough in half, shape into discs, wrap in plastic wrap, and chill for at least 1 hour. 2. Prepare the Apple Filling: In a saucepan over medium heat, combine diced apples, brown sugar, granulated sugar, lime juice, and vanilla extract. (Add cinnamon if desired.) Cook for 5-7 minutes, stirring occasionally, until the apples soften slightly and the sugar melts into a syrup. Remove from heat and let the mixture cool completely. 3. Assemble the Hand Pies: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out one of the chilled dough discs to ⅛-inch thickness on a lightly floured surface. Cut the dough into circles or rectangles (about 4 inches wide). Repeat with the second dough disc. Spoon 1-2 tbsp of the apple filling onto the center of each piece of dough. Place a second piece of dough on top and press the edges together with a fork to seal. Use a sharp knife to make small slits on top of each pie for ventilation. 4. Apply Egg Wash and Bake: Brush the tops of the hand pies with the egg wash. Bake for 20-25 minutes or until the pies are golden brown. Remove from the oven and let them cool on a wire rack. 5.
