When you long for decadent Chocolate Cake but simultaneously craving Tiramisu which helps you  create a recipe for New Year’s Eve that will start your 2025 just right!  Makes: 2, 6 inch cakes  Serves: 12 Ingredients: 1/4 cup or 4 tbsp room temperature butter 1/4 cup vegetable shortening 1 1/2 cups sugar 1 teaspoon vanilla extract  2 room temperature eggs 1 cup lukewarm milk 3/4 cup brewed coffee  1-3/4 cups flour 3/4 cup cocoa powder  1/8 tsp Diamond Crystal baking salt  3/4 tsp baking soda 3/4 tsp baking powder 4oz coffee to soak the cake  Icing:  8oz mascarpone cheese 1 cup powdered sugar 1 tbsp instant cappuccino powder 2 tsp vanilla extract  1 cup heavy cream  Instructions: Generously grease and line (two) 6’ inch 9’ inch round cake pans.  Preheat the oven at 350F.  Cream butter, vegetable shortening, sugar and vanilla until light and fully. Then add eggs. Now pour milk and coffee into the batter. Blend well. Time to combine flour, baking soda and baking powder. Gently spoon into the mixer. Occasionally scrape off the sides of the bowl so the batter is well combined.  Add Diamond Crystal’s baking salt to a bowl of cocoa powder. Mix with a fork. Then add it to the batter while the mixer is turned off. Reason being that it won’t explode and be all over your counter and your clothes.  Once you feel it’s well mixed, pour it into prepared pans. Bake it for 50 minutes or until the toothpick inserted in the center comes out clean. Cool for 15 minutes before removing the cake from the pans. Once the cake is completely cooled off, brush some expresso on the cake. Then whip up some mascarpone icing and layer it evenly. Dust generous layer of cocoa powder and decorate it with red berry currant.
