No better sound than your kids saying “more please” to an easy healthy dinner you made.  Sweet curry chicken stirfry : 1 pound chicken breast sliced into small pieces-  sometimes you can buy it done and it’s called fajita or stirfry style  1 pound 12 oz broccoli florets 1 yellow onion, sliced thin and small 3 tbsp cornstarch or arrowroot starch  1 tsp salt divided  1 1/2 cups chicken broth (can be low sodium) 1 tsp curry powder  1 tsp paprika  1 tsp garlic powder  3 tbsp low sodium soy sauce  1 tbsp honey  Avocado oil spray  some people might enjoy red chili flakes Easy Chicken Stir Fry Recipe 	1.	Prep the onions: Spray a pan with avocado oil and sauté sliced onions over medium heat for about 3 minutes. 	2.	Season the chicken: In a medium to large bowl, add chicken, cornstarch, and seasonings. Massage the mixture into the chicken (I like to wear gloves for quick cleanup). 	3.	Cook the chicken: Spray the pan with more avocado oil and add the chicken. Sauté for 1 minute to get a nice sear, then add ½ cup of chicken broth and stir. 	4.	Add broccoli: Toss broccoli into the pan, adding more chicken broth (½ cup at a time) as needed. 	5.	Finish cooking: Cook until the chicken is fully done (about 10 minutes). The broth will thicken into a sauce. 	6.	Flavor boost: Stir in soy sauce and honey until combined. Serve and enjoy! Simple, quick, and delicious!
