Lettuce Cups!  Ingredients: Ground Pork - 1.5lbs Onion - 1 Garlic - 3 cloves Mushrooms - 2c (diced) Sesame Oil Hoisin Sauce  Korean Chili Flakes MSG Ground Ginger  Salt Peanuts  Green Onion  Instructions: 1. Add the ground pork to a hot pan making sure to press down the flatten out. Cook on one side without disturbing for 5-8mins on medium heat to form a nice crust.  2. While cooking the pork work on your veggies. You’re going to dice an onion, garlic cloves, bell pepper and  mushrooms into roughly the same size.  3. Break up the pork and mix. Continue to cook until there is no more pink. At this time add in all the veggies and cook for another 5mins mixing frequently.  4. Add in some sesame oil, hoisin sauce, Korean chili flakes, MSG, ground ginger and a pinch of salt. After eating this, when I make it again I’d add a splash of rice wine vinegar as well.  5. Finish with some chopped roasted peanuts and green onion. I served the mixture in some romaine lettuce cups with toasted sesame seeds and sriracha mayo. Marinate for at least an hour preferably overnight.  3. Cook macaroni. While cooking grate your onion and carrot. Once macaroni is cooked add in the onion and apple cider vinegar while it’s still hot. Mix together your mayo, milk, sugar, salt and pepper.  4. Let macaroni cool completely. Pour in your mayo mixture along with the carrots and stir well to combine.  5. Pat chicken thighs dry and add to a skillet on high heat. Cook for 5 minutes each side. Check temp to make sure it’s at 165 before letting it rest for 5 mins. 6. Add green beans to a pan on high heat and cook for 5mins before adding in some water and covering to steam. Then add in the butter, soy sauce and garlic salt. Toss to combine. Chicken Sausage Orzo! Ingredients: Chicken Sausage - 10 links Onion - 1 Orzo Pasta - 1lb Butter - 4tbsp Chicken Broth - 32oz Light Cream - 1/2-1c MaD Seasoning Salt Italian Seasoning Baby Spinach - 8oz Lemon Juice  Parmesan - more…still more  Directions: 1. Slice the chicken sausage and add to a skillet or deep pot. Cook on medium-high heat until well charred (5-8mins).  2. Add one diced and the orzo pasta along with the butter. Stir and cook for 3-5mins.  3. Then pour in chicken broth until covering the orzo by about an inch. Then pour in 1/2-1c of light cream and mix. Then I added some MaD Seasoning Salt and Italians Seasoning. 4. Cover and cook on low until most of the liquid is absorbed and the pasta is tender. Then add in the spinach, a squeeze of lemon juice and Parmesan until you feel judged…then add some more. Mix and cover until the spinach is cooked.  5. At this time you can add some more broth or cream if it is too thick. Ingredients: Sauce: Butter - 4tbsp  Onion - 1 Garlic - 5 cloves Tomato Paste - 6oz San Marzano Whole Peeled Tomatoes - 3 28oz cans Salt Pepper Italian Seasoning  Parmesan Rind Basil Leaves - 2 Meatballs: Ground Beef - 1lb Ground Pork - 1lb Onion - 1 Garlic - 2 cloves Eggs - 2 Adobo Seasoning  Italian Seasoning  Parsley - 2tbsp (fresh) Worcestershire Sauce Italian Breadcrumbs - 1c Parmesan - use your heart  Directions: 1. First step is to prep your onions and garlic. For the sauce roughly dice one onion and 5-6 cloves of garlic. For the meatballs use a cheese grater to finely shred another onion. Make sure to scoop all the onion and any juice into a container to use.  2. Melt the butter in a pot and then add in your garlic and onion. Cook for about 5 mins before adding in the tomato paste. Stir in the tomato paste for about 3mins until it is fully incorporated.  3. Add in the cans of peeled tomatoes and give it a mix. Season with salt, pepper, Italian seasoning, a Parmesan rind and two basil leaves. Partially cover the pot and simmer for as long as you’re able to, the longer the better. Once done remove the rind and I prefer my sauce smooth so I always use an immersion blender.  4. Combine all the meatball ingredients and use your hands to thoroughly mix. Take a small amount and microwave for a few seconds to cook. Taste to see if you are happy with the seasonings. Form the balls into your desired size. I was able to make 24. 5. When ready to cook meatballs add to a skillet for 3mins on each side to sear. Then add into your sauce pot along with any juices from the pan. Simmer in the sauce until the meatballs are cooked through (30-40mins).  6. Cook the spaghetti and reserve some of the pasta water. Drain and then add in some of your sauce. Add in some pasta water to help the sauce thicken and stick to the spaghetti.  7. Serve topped with some fresh parmesan and garlic bread. Ingredients: Yellow Potatoes - 3lbs Butter - 4tbsp Milk - 1/2-1c Sour Cream - 1/2c Minced Garlic - 2tbsp Salt Pepper Dried Chives  Parmesan - keep going  Directions: 1. Wash and dice the potatoes into quarters. You don’t have to dice them if you don’t want but it helps them soften a lot quicker. Add the potatoes to a pot and cover with water. Add a pinch of salt and boil until they are knife tender.  2. Drain the potatoes and add them to a large bowl. Add in the butter separated into some cubes. Add the sour cream, minced garlic and some of the milk and use a hand masher to smooth the out. Add more milk as needed.  3. Then season with salt, pepper, dried chives and Parmesan until your heart tells you to stop. Continue to mash the potatoes until you reach your desired texture. Ingredients: Chicken Breast - 2 Onion - 1 small Garlic - 6 cloves Adobo Seasoning Italian Seasoning  Lemon Juice - 1 Bay Leaf - 2 Chicken Broth - 32oz Worcestershire Sauce  Onion - 1 Garlic - 6 cloves Carrot - 4 Celery - 5 Mushrooms - 8oz Frozen Corn - 1c Frozen Pease - 1c Frozen Potatoes - 2c Pie Crust - Chicken Stock - 2 1/2c Light Cream - 1c Flour - 4tbsp (+1tbsp) Salt Pepper Italian Seasoning Directions: 1. I made my own boiled chicken but if you don’t want to do that you can just use a shredded rotisserie chicken! I added two chicken breast to a pot with one small onion quartered, garlic cloves, adobo seasoning, Italian seasoning, the juice from one lemon (I leave the lemon whole in the pot) and two bay leaves. Pour in chicken stock until covering the chicken breast and add a few dashes of Worcestershire sauce. Bring to a boil and then lower heat to a simmer and cover until the internal temp of the chicken reaches 165. Let chicken cool and then dice. I like to strain the pot and use the stock for the pot pie.  2. Dice all of your veggies into roughly the same size chunks and thinly slice the mushrooms.  3. Add in the onions, carrots, celery and mushrooms to a skillet or Dutch over with some olive oil and cook for 5-8minties until softened. Add garlic along with salt, pepper and Italian seasoning. Then add the flour and mix to fully incorporate. Cook for 3mins and then slowly add in the broth while mixing. Allow to thicken for a few mins and then add in chicken and light cream. I added 1tbsp of flour mixed with 3tbsps of water to help thicken it more.  4. Add in the corn, peas and potatoes. Season again with salt, pepper and Italian seasoning. Then top with pie crust and press along the sides. Brush the top with an egg wash and some salt and pierce the center to allow steam to escape.  5.  Bake at 375 for as long as it takes for the pie crust to turn brown. Mine too about 40mins. Let it sit for a little while to thicken. I didn’t let mine sit long enough so it was a little soupy at first. Ingredients: Chicken Breast - 2 Egg Noodles - 12oz Carrot - 2 large Celery - 5 Onion - 1 Garlic - 5 cloves Red Potatoes - 2 Mushrooms - 20 Chicken Broth - 32oz Light Cream - 1/2c Adobo Seasoning  Italian Seasoning Italian Herbs - 2tbsp (fresh) Directions: 1. I prepped everything for this the night before. You’re going to trim the gross stuff off two chicken breasts and then season both sides generously with adobo seasoning and Italian seasoning.  2. Dice all your veggies into roughly the same size. For the potatoes I put them in the freezer overnight after.  3. I also precooked my eggs noodles. This is optional, you can put them in the soup until they are done if you want to. If you prep them undercook them a bit so they finish in the soup.  4. Sear the chicken in a Dutch oven for 3-5mins each side until a nice crust is formed. Remove chicken and then add all the veggies except for the garlic. Season with adobo and Italian seasoning.  5. Cook the veggies for 5mins until they are softened. Add in the garlic and cook for 2mins. Then pour in the potatoes, add back in the chicken and cover with chicken broth. Season again with adobo seasoning and add some fresh italian herbs. Cover and cook on medium low for 25-30mins until chicken is cooked through.  6. Remove the chicken and shred. Add back to the soup along with a half cup of light cream and the egg noodles. Let the noodles cook until they are cooked.
