I ran out of dark chocolate so I made it.  RECIPE-ish: 1. Take cacao paste and cacao butter in 50/50 proportion. I used about 1 cup each to make a big batch.  2. Chop it all. 3. Place it in a small pot.  4. Very slowly melt it, stirring often to make sure it doesn’t burn.  5. Once it’s melted and consistent, turn off the heat. 6. Add a sweetener you like (coconut sugar, honey, maple syrup - whatever you’ve got. The amount depends on how sweet you like it).  7. Add a pinch of sea salt. Or more, if you like a more salty kick. 8. Pour into molds or whatever vessel you have - silicone is best, here I used container lids I found at my place. 9. Put your chocolate in the fridge for a couple of hours (if you’re impatient, place the chocolate in the freezer until it hardens).  CHOCOLATE IS READY! To make the best dessert ever, pour your chocolate liquid over pitted dates + peanut butter. Optionally, you can add rose petals or powder, quinoa puffs, chopped nuts goji berries… whatever you love! These melt in your mouth dark chocolate bars are intended for eating and not baking with. They become solid but not hard. I have a chocolate addiction and chocolate bars are not cheap. Neither is coconut oil or honey but I can make quit a few batches of chocolate with them compared to a little bar of dark chocolate I've been buying up until now. I swapped out the vanilla for orange extract once because I love orange chocolate. Next I want to try making an espresso flavored bar because my other addiction is coffee 😂 This chocolate melts in your mouth. Mint would be another fun flavor to try. Let me know in the comments if you try this or what other flavors you would try.  If you dont have candy molds I read some people have used aluminum foil in a smaller container but I have not personally tried that. I love how simple the ingredients are in these and they have helped satisfy my cravings for chocolate.  Recipe for Dark Chocolate 1/2 cup of coconut oil (it comes in solid form) 1/2 cup of cacao or cocoa powder  3 Tb of honey or maple syrup  1/2 tsp vanilla extract  In a small saucepan mix everything together. It will be like a thick ish paste. On the stove heat the chocolate mixture over low heat just enough to the point where you can mix it until smooth and you are able to pour it into your molds. Have your molds set up on a cooling rack or flat plate to move it easily to the refrigerator from the counter. You can add different flavored things in your molds before adding in the chocolate. A few options are:  Nuts  Shredded Coconut  Salt Cayenne  Chopped Coffee Beans  Or you can leave them plain too. Pour the chocolate into the molds and carefully place into the refrigerator to set. My chocolate molds are really thin and only take an hour to firm up.
