Cook blackberries, sweetener, and lemon juice on medium heat for 15 minutes until thick and glossy; cool. 2. Soften ice cream for 20 minutes, then layer half in a lined pan. Top with compote, cake, and cookie crumbles. 3. Add another ice cream layer, then more compote, cake, and crumbles. 4. Freeze 2+ hours. Scoop into purple Joy Color Cups and enjoy!
