Ingredients 1 -12oz pack Impossible Ground Beef 3 tbsp extra virgin olive oil 1 potato diced 2 carrots diced 1 small onion diced 3-5 cloves garlic minced 1-2 tbsp tomato paste 1 can diced tomatoes(with liquid) 1/2 cup water 2-3 tbsp soy sauce 1/2 cup frozen peas 1/4 cup raisins 1/4 cup olives (or more) Salt and pepper to taste 1. Over medium heat add 2 tbsp olive oil and brown sweet potato and carrots 5-10 minutes or until nicely browned. Set aside. 2. Add rest of oil and sauté onions and garlic 2-3 minutes. Season with salt and pepper. 3. Add Impossible Ground Beef, and break apart with wooden spoon. Cook about 7-8 minutes until browned. 4. Add tomato paste and cook down for l minute. Add tomatoes, raisins, soy sauce and black pepper, mix and add beef broth. Toss in potato and carrots and combine well. 5. Bring to a gentle simmer and cook down to evaporate the liquid 5-10 mins. 6. Add frozen peas and olives to finish. Mix well and taste to adjust seasonings. Enjoy with rice!
