CHICKEN ALFREDO CASSEROLE 🥘 Layers on layers of of chicken, alfredo sauce, mozzarella cheese- sorry I’m not sharing🤤 INGREDIENTS: -14 oz cauliflower florets, cut into bite-size pieces -32 oz chicken breast -1 tsp onion powder -1 tsp garlic powder -1/2 tsp salt -1/4 tsp pepper -1 tbsp olive oil -2 cups low carb alfredo sauce -12 oz shredded mozzarella cheese, divided DIRECTIONS: 1. To steam the cauliflower, place cut cauliflower in a microwave safe bowl with 1 cup of water. Cover with a damp paper towel and microwave for about 4 mins or until the cauliflower is fork tender. 2. Drain the cauliflower and pat dry with a paper towel. Set aside. 3. Cut the chicken breast into 1-inch cubes and season with onion powder, garlic powder, salt, and pepper. 4. In a skillet over medium high heat add your olive oil and cubed chicken. Cook for about 10 mins or until chicken is cooked through. Set aside. 5. Preheat oven to 350F. 6. In a small pot heat the alfredo sauce over medium heat. When it is hot, add 3 oz of mozzarella cheese to the sauce and stir until it is melted and sauce is smooth. 7. Prepare a 13×9 inch casserole dish by spraying it with non-stick spray. 8. Start layering your dish with some alfredo sauce, cauliflower, chicken, mozzarella, and repeat. 9. Bake for 30 mins, or until the casserole is warmed through and the cheese is fully melted.
