Line a sheet pan with parchment paper and set aside.2️⃣Make the flatbread. Add the cottage cheese, egg, salt and oregano to a small bowl. Mix to combine.3️⃣Brush the sheet pan with a generous amount of olive oil, then spoon one and a half tablespoon spoonfuls of the cottage cheese onto the sheet pan, spread out. 4️⃣Place an onion round on top of the cottage cheese and press down. Drizzle the tops with olive oil and season with salt, pepper and thyme. Place them in the oven for 24-28 minutes, until the edges are browned and crisp. 5️⃣Allow them to cool for a couple of minutes, then gently lift the crisps with a spatula. .

Add 1 thinly sliced yellow onion at the base with 4-5 minced garlic cloves. 3.Season both sides of beef with 3-4 generous pinches salt, pepper, 1 packet of taco seasoning. Rub well on all sides. 4.Pour in 17oz beef broth and add 2 chipotle adobo peppers (from the can). 5.Cover, then place in the oven at 325F for 4hrs. If your chuck is more than 3lbs, aim for about an hour per pound + 1 hour. So if its 2 lbs go for 3 hrs, etc. 6.After 4hrs, remove from the oven, shred using two forks, mix well with the drippings, then put back in the oven at 400F for 30-40 mins. Mix again when you remove from the oven and use it as your protein for whatever dish you want. I served these inside lowcarb tortillas with mashed guac, fresh chopped cilantro, cheese, and hot sauce.

Shred carrots and chop green onions. Whisk together shredded and squeezed zucchini, shredded carrots, chopped green onions, the eggs, shredded cheddar, and 1/3 almond flour until well combined. Seasoning with salt and pepper or your seasonings of choice. Grease a baking tray lined with parchment paper and divide the mixture into equal portions. I used 1/2 cup- measuring cup. If you prefer smaller fritters, use 1/4 cup to measure or a ice cream scoop. Bake for 20-25 minutes or until golden brown at 200°C/ 400°F. Serve warm or cold with some dip. .
