Why didn’t I think of this sooner?! The disclaimer is that nothing will beat the fall-off-the bone tender Galbijjim you can get from a pressure cooker like instant pot. But when you’re feeling lazy, this easy version actually does the trick. I grew up eating Galbijjim during Korean holidays and big family gatherings, and it was a treat probably because it was a lot of work for my grandma or my mom to make for a big family. I simplified this recipe, hoping that even on a weeknight, when you’re craving the flavors of galbijjim, you can, in fact enjoy it using a rice cooker :) Here’s the full list of ingredients that make Galbijjim just enough for two: 1.5 lb bone-in short ribs 1/4 peeled apple 1/2 small onion 4 Tbsp soysauce 1 Tbsp sugar 1 Tbsp brown sugar 4 cloves (1 Tbsp) minced garlic handful of seedless grapes 1 Tbsp sesame oil Lots of cracked black pepper large chunks of carrots, Korean radish, mushroom (optional), and scallions To give it a bit of a kick, throw in some sliced Serrano or jalapeño peppers with everything else enjoy!
