Personally, I have yet to encounter a baklava that surpasses the Lebanese version. Allow me to share the recipe with you. Filling recipe  2 c walnuts 1 c cashews  1/2 c pistachios  2 tbsp ghee 1/4 c sugar  1 tsp cinnamon  To prepare the baklava filling, begin by placing all the ingredients in a food processor. However, it is important not to over-process the nuts, as this can result in a cakey texture. Leaving the nuts slightly larger will provide the baklava filling with a distinct and appealing definition. 1 c melted ghee 1 lb filo dough  With this technique for preparing baklava, you will find it incredibly easy to make at home. Start by cutting the Filo dough in half to fit your tray. Traditionally, my mother would use a full cookie sheet pan. If you choose to use the full tray, there is no need to cut the dough. Divide the Filo into two portions and begin by spreading 1/4 cup of ghee at the bottom of the tray. Then, layer the naughty filling and cover it with the remaining half of the Filo dough. Finally, generously smother the top with the remaining ghee. Bake at 300° for approximately one and a half hours. simple syrup  2 c sugar  1 c water  1 tbsp lemon  simmer till everything is completely combined, then squeeze in lemon. Set aside to cool.  Immediately after baklava is finished baking drizzle the simple syrup all over the baklava and allow it to rest. For best results allow the simple syrup to mend everything together. The best dessert welcoming the sweetest babies 🤍  Meghle recipe: Ingredients 	•	1 cup rice flour 	•	7 cups water 	•	1 heaping tablespoon ground cinnamon 	•	1 heaping tablespoon ground caraway 	•	2 cups coconut sugar Instructions 	1.	Combine Ingredients: In a large pot, whisk together the rice flour, water, cinnamon, and caraway until smooth. Ensure there are no lumps. 	2.	Cook the Mixture: Place the pot over medium heat and bring the mixture to a boil, stirring constantly with a wooden spoon or whisk to prevent sticking. 	3.	Add Sweetener: Once the mixture begins to thicken, stir in the coconut sugar. Continue cooking and stirring for 10-15 minutes, or until the Meghle reaches a thick, pudding-like consistency. 	4.	Serve: Remove the pot from the heat and pour the Meghle into serving bowls or small ramekins. 	5.	Optional Garnishes: Let the Meghle cool to room temperature. Garnish with shredded coconut, chopped nuts (like pistachios or walnuts), and raisins, if desired. 	6.	Enjoy: Serve at room temperature or chilled. As promised, part 2: the cooking process! ✨ I see a lot of people start by frying their cilantro/garlic or cooking all their mloukhye at once—trust me, these things make a difference! The way I see it, you’re making this meal once in a while, so after putting in all that effort, you might as well treat it with care. Side note: I only used two pots because I didn’t have one big enough. Fasoulia made with Beef cheeks!! This green bean stew is made various ways throughout the Middle East. It’s very common in Lebanese and Egyptian households. I grew up eating what I call the big three stews which were Fasoulia (green beans), Bisella (peas) and my favorite Bamya (okra). I’ve had it with a few different cuts of meat but never with beef cheeks so I thought I’d give it a try and let me tell you… it did not disappoint. The marbling of the beef cheeks really ass a delicious deep flavor to the stew. . What is your favorite stew? . 4lbs Beef Cheeks trimmed and cubed 1 onion diced 3 cloves garlic minced 2 Tb pepper paste 4 Tb tomato paste  1/2 tsp all spice  Salt and pepper to taste 4 cups green beans  1 lemon juiced . Season beef cheeks with salt and pepper. In a large pot over medium high heat add a little oil and sear the beef cheeks in batches until brown all over, remove from pot. In the same pot add onions and cook until translucent 3-5 min. Add garlic, pepper paste, tomato paste. Fill halfway with water and stir to break up paste. Add in the seared beef cheeks, all spice and fill with water until meat is covered. Simmer for 2-3 hours or until the meat is fork tender. Add in green beans, lemon, adjust seasoning and cook for additional 15-20 min or until beans are cooked.
