Thai Red Curry Beef This is the dish you want to have in your back pocket on nights when time is limited. Literally ready in 10 minutes, and pro tip: meal prep your rice over the weekend so all you have to do is reheat it later in the week to serve with this dish. This recipe is for 1 serving - you can obviously multiply it for however many people you are cooking for. Side note: not all Thai red curry pastes are the same, so be sure to try it before adding it to the sauce to make sure it's not too spicy. But with the balance of the coconut milk, the heat level is perfect for me. This is ONE POINT! So go ahead and have a whole cup of rice on the side for a 7 point meal. Thai Red Curry Beef Ingredients for 1: 1/4 cup light coconut milk + 2 tablespoons (makes for a saucier sauce) 1 teaspoon red curry paste 1/2 teaspoon brown sugar (I used Splenda brown sugar) 1 teaspoon cornstarch 1 tablespoon fresh lime juice 1/2 cup red peppers 1/2 cup fresh green beans 5 ounces of sirloin beef, sliced thin 1 tablespoon fresh basil chopped salt and pepper avocado oil spray fresh basil for garnish Instructions Prepare the Sauce:In a small bowl, whisk together the light coconut milk, red curry paste, brown sugar, cornstarch, and lime juice until smooth. Set aside. Cook the Vegetables:Heat a skillet over medium heat and spray lightly with avocado oil. Add the green beans and red peppers to the skillet, cooking for 3β4 minutes or until they are slightly tender but still crisp. Move the vegetables to the side of the skillet. Cook the Beef:Season the sliced sirloin beef with a pinch of salt and pepper. Add the beef to the skillet and cook for about 2 minutes, stirring occasionally. Combine with Sauce:Pour the coconut curry sauce mixture over the beef. Stir everything together and cook for an additional 1β2 minutes, or until the sauce thickens and coats the beef and vegetables.
