#madeinpartner FULL RECIPE SERVES 4 2 Tbsp. extra-virgin olive oil 4 (6-oz.) salmon fillets Salt and pepper to taste 2 medium leeks, cleaned and thinly sliced into half-moons 1 ¼ cups pearl couscous 1 (15-oz.) can chickpeas, drained and rinsed 2 ½ cups broth Creamy Lemon Sauce 1 Tbsp. extra-virgin olive oil or butter 2 Tbsp. minced shallots ¼ cup broth or white wine ½ cup half-and-half 1 Tbsp. Dijon mustard 1 Tbsp. finely chopped fresh tarragon or dill 1 tsp. lemon zest + 1 Tbsp. fresh lemon juice Heat 2 Tbsp. olive oil in a Made In CeramiClad sauté pan over medium heat. Season salmon with salt and pepper, and arrange fillets, flesh side-down, in pan. Cook for 4 minutes, gently flip, and cook for 2 more minutes, until medium. Transfer salmon to a plate. Add leeks to pan and cook until soft, about 3 to 4 minutes. Add couscous, chickpeas, and broth, and season mixture with salt and pepper. Bring mixture to a simmer, cover, reduce heat to medium-low and cook until the couscous is tender, about 12 to 15 minutes. Meanwhile, prepare Creamy Lemon Sauce. In a small fry pan, heat oil or butter over medium heat. Add shallots; cook 2 minutes. Add broth, cook 2 minutes to reduce. Add half-and-half, mustard, and tarragon or dill. Cook, stirring constantly, until the sauce thickens, about 2 to 3 more minutes. Season with salt and pepper. Remove from heat and stir in lemon zest and juice. Nestle salmon fillets back into pan and top with Creamy Lemon Sauce. Garnish with extra fresh herbs.
