Creamy Lemon-Tarragon Salmon and Couscous (FULL RECIPE below). A lovely lineup of perfectly pan-seared salmon with pearl couscous, chickpeas, and leeks topped with a rich, lemony cream sauce. Use the link in my bio to receive 10% off your first order of the CeramiClad collection. #madeinpartner FULL RECIPE SERVES 4 2 Tbsp. extra-virgin olive oil 4 (6-oz.) salmon fillets Salt and pepper to taste 2 medium leeks, cleaned and thinly sliced into half-moons 1 ¼ cups pearl couscous 1 (15-oz.) can chickpeas, drained and rinsed 2 ½ cups broth Creamy Lemon Sauce 1 Tbsp. extra-virgin olive oil or butter 2 Tbsp. minced shallots ¼ cup broth or white wine ½ cup half-and-half 1 Tbsp. Dijon mustard 1 Tbsp. finely chopped fresh tarragon or dill 1 tsp. lemon zest + 1 Tbsp. fresh lemon juice Heat 2 Tbsp. olive oil in a Made In CeramiClad sauté pan over medium heat. Season salmon with salt and pepper, and arrange fillets, flesh side-down, in pan. Cook for 4 minutes, gently flip, and cook for 2 more minutes, until medium. Transfer salmon to a plate. Add leeks to pan and cook until soft, about 3 to 4 minutes. Add couscous, chickpeas, and broth, and season mixture with salt and pepper. Bring mixture to a simmer, cover, reduce heat to medium-low and cook until the couscous is tender, about 12 to 15 minutes.  Meanwhile, prepare Creamy Lemon Sauce. In a small fry pan, heat oil or butter over medium heat. Add shallots; cook 2 minutes. Add broth, cook 2 minutes to reduce. Add half-and-half, mustard, and tarragon or dill. Cook, stirring constantly, until the sauce thickens, about 2 to 3 more  minutes. Season with salt and pepper. Remove from heat and stir in lemon zest and juice. Nestle salmon fillets back into pan and top with Creamy Lemon Sauce. Garnish with extra fresh herbs.

Shrimp and sausage orzo pasta 1 tablespoon avocado oil 9 oz sausage cut into 1/4 inch thick rounds 5 cloves garlic, minced 10 oz dried orzo pasta 2 cups low sodium chicken broth 1 14.5 oz can diced tomatoes, preferably with herb seasonings 1 tablespoon smoked paprika S&P 8 oz Uncooked peeled and deveined large shrimp 1/3 cup frozen peas 1 1/2 tablespoons chopped fresh basil Heat oil in large sauce pan, over medium heat. Add the sausage and cook, until evenly browned on both sides. Add garlic and cook until fragrant. Add orzo stirring occasionally for a couple minutes then add broth, tomatoes, and remaining seasonings. Stir and bring to a boil. Cover, and simmer undisturbed, until the orzo is almost cooked about 7-9 minutes and liquid has absorbed by half. Then add shrimp and peas cover and simmer another 7-9 minutes until cooked through. All liquid should be absorbed. Too with basil and serve. Add feta if desired.
