Y’all loved my first gift to the internet, so here’s another cherished recipe I know you’ll love too! (Dance Worthy) Caramelized onion and brie melts! Prep: 30mins Total: 1hr Serves 1-2 Ingredients * 6 tbsp butter, divided in half (84g) * 3 onions, cut into slices (510g) * 2 tbsp sherry (29ml) brandy, wine of choice * Salt and pepper * 2-3 tbsp brown sugar, divided (39g) * 1 wheel brie, optional rind removed, cut into strips (226g) * 1 baguette or French loaf, cut horizontally (100-120g) * 6oz Prosciutto (170g) * 2-3 sprigs of Fresh thyme - optional (20g) * A handful of arugula (80g) * Balsamic glaze or fig jam for spreading 1. To a large pan add half of the butter and begin to melt over medium heat. Add onions to the pan and saute for about 15 minutes stirring occasionally add the remainder of butter, sherry, salt and pepper, and some sugar if desired. 2. Cook for 30 more minutes stirring occasionally but it should end up with a dark brown jammy texture. Set aside to cool for about 5 minutes. 3. Meanwhile, on a sheet pan open the bread, add brie to one side, and prosciutto to the next. Top the prosciutto with the remaining brown sugar and broil for 3-5 minutes. 4. Until the prosciutto is crispy and the cheese is melty. 5. Remove from the oven, add the caramelized onions, arugula, fresh thyme is using, and a layer of balsamic glaze or jam. 6. Put the pieces together and slice. Serve and enjoy! for the optional pears: 2-3 pears, peeled and cored 1c granulated sugar 1 cinnamon stick or 1 tsp dried 1 1/2c water 1c wine / red,white or w/e! Experiment! Optional grated nutmeg To a medium pot over medium heat, add all the ingredients and stir occasionally, it’s going to get very hot kind of like a syrup but with a large fruit in it! Cook for about 30-45 minutes and let cool, slice and put aside for a sandwich or add a scoop of ice cream for dessert!
