With creamy hummus, tangy feta cheese, briny olives, tart and crunchy marinated artichoke hearts, and fresh cucumber tomato salad, it’s a flavor party in every spoonful.  This quinoa bowl is plenty satisfying all on its own, with the quinoa being a great source of plant based protein. But if you’d like to “beef” it up even more you can add chicken, canned tuna, sardines or smoked salmon. RAINBOW MEDITERRANEAN BEAN SALAD 🥗🫘🍅🧅 RECIPE BELOW 📝⬇️ INGREDIENTS: •Persian cucumbers •grape tomatoes •red onion •cannellini beans or chickpeas •radish (optional) •bell peppers •green onion or any herbs •feta for serving (optional) Dressing: •3 tbsps olive oil •1 tbsp red wine vinegar •1 tsp Dijon mustard •1/2 lemon, juiced •salt and pepper to taste •1/2 tsp oregano DIRECTIONS: •Clean and chop all your veggies and add to a bowl.
