RECIPE: Brown 1 lb of ground meat you could use chicken or beef Add one small onion chopped add any veggies you'd like or none at all, chopped small add one can of beans, partially drained, you could use refried black or any other bean you like one can of rotel or crushed tomatoes if you add a lot of veggies, then also add half a can of water one small can enchilada sauce mix in one can of green chilies or jalapenos, or both add 1 to 2 teaspoons of cumin 2 to 3 tsp of chili powder one teaspoon of garlic salt red pepper flakes to taste let that that simmer for 5 minutes or so on medium heat taste for seasoning and adjust add in eight chopped corn tortillas, cook for about 2 minutes, stir, then cover for an additional 2 to 3 minutes, uncover, turn off the heat top with two cups of cheese and chives or green onions. If you have them, put the cover back on for 2 to 4 minutes until everything is nice and melty serve with crushed chips sour cream avocado cilantro salsa, whatever you like!! this is a great way to use up leftover veggies, and it heats up really well the next day. let me know if you make it!!
