PSA: we don't want flowers for valentine's day we want a cute tiny pasta shape + heaps of cheese. 💁♀️🧀 WHAT YOU NEED: 1 tsp crushed black peppercorns 3 tbsp butter 1.5 cups small shaped pasta (TJ's farfalline, orzo, ditalini, pastina etc!) 2 3/4 cups water pinch of salt (the cheese adds flavor/sodium) 1.5 cups (has to be) freshly grated pecorino romano WHAT TO DO: 1. toast the peppercorns for a few minutes until fragrant. add the butter and pasta and stir until the pasta soaks up the butter. 2. add the water and pinch of salt, cook until the pasta is a little under al dente and the liquid is about 80% absorbed. (you can add in more water while it's cooking if yoh need! some stoves will cook it faster - and it will evaporate faster than my stove and settings.) 3. mix the freshly grated cheese into the pasta and remaining liquid in the pan and stir quickly. (i added the cheese in two batches the make sure it mixed in evenly and avoided any clumping.) 4. transfer to bowls and top with more fresh cheese and more freshly grated black pepper. *** recipe notes: yes you could cook pasta in both for more flavor but i feel like that takes away from the traditional taste of cacio e pepe. i get all my cute pasta shapes on either amazon (storefront linked in bio) or local italian markets.
