Mongolian beef meatballs 🥩🥦🧄 recipe below! FOR THE MEATBALLS: - 1 pound ground beef - 1/2 tbsp freshly grated ginger - 6 roughly chopped green onions (light green & white parts only, save dark green parts for later) - 1/2 cup gf panko - 1 egg - 1/2 tsp sea salt - 1 tsp garlic powder - 1 tsp onion powder - 1 tbsp coconut aminos FOR THE SAUCE: - 1/3 cup coconut aminos - 1/4 cup beef bone broth - 1 tsp rice vinegar - 1 tsp toasted sesame oil - 1 tsp fish sauce - 2 tbsps coconut sugar - 2-3 cloves of garlic (minced) - 1/2 tbsp grated ginger - 1 tbsp arrowroot starch FOR SERVING: - the dark green onions we chopped earlier *optional: - Sesame seeds - Broccoli - Jasmine rice INSTRUCTIONS: - Preheat your oven to 400. - Start by grating a thumb of ginger (about 1 tbsp total) and roughly chopping your green onion. Separating the light green and white from the dark green. - Then in a large bowl, add all your meatball ingredients (listed above). Mix until just combined, careful not to over mix, it’ll dry out the meat. Form into balls and place on a baking sheet lined with parchment paper. Pop in the oven for 18-22 minutes or until you reach an internal temp of 165. - Then in a medium bowl, add all of your ingredients for the sauce (listed above). Whisk until well combined. - Heat up your skillet over medium heat, pour in your sauce. Stir every couple of minutes until thickened. Reduce heat and add in your cooked meatballs. Toss to coat. Allow the meatballs to simmer in the sauce for a minute or two to give the flavors a chance to marry. 💒😚 - Then it’s time to plate!!! I served over a bed of Jasmine rice, with some broccoli on the side. Lastly I topped with our roughly chopped dark green onion and sesame seeds! Enjoy !!!!!!!
