LETā€™S MAKE FRESH MOZZARELLA! šŸ¤ŒšŸ¼ If youā€™ve never made homemade mozzarellaā€” THIS IS YOUR SIGN! Iā€™m not talking about that vinegar version either thatā€™s more of a ā€œcottage cheeseā€!  This takes 30min to make and the flavor is AMAZING! You just need a few things: - raw milk or pasteurized! I prefer full fat so I use whole raw milk!  - rennet (I prefer liquid) - citric acid  INGREDIENTS  1/2 gal milk  1/8 tsp rennet with 1/4c lukewarm water  3/4tsp citric acid with 1/4 lukewarm water  HOW TO: Heat milk up to 55F then add citric acid water. Stir. It should look a little curdled. Bring milk to 80-90 degrees then remove from heat. Add in rennet water and gently stir for NO MORE than 30 seconds. Place lid on and donā€™t touch for 15min. Meanwhile, prepare a bowl of ice water.  Remove lid and cut into curds with a knife, kinda like a checkers board, about 1in curds. Ladle or pour curds into strainer and squeeze as much whey out as possible. Keep some whey for laterā€” youā€™ll store your cheese in it!  Either whey up to 175F, add water if necessary OR bring straight water up to 175F so cheese is complete submerged. Turn burner either off or low.  Place curd into heated liquid for 30-60 seconds. Check its stretch. I recommend using high temp glovesā€” makes it much easier! Stretch at least 3x and add sea salt, if desired.  Shape cheese into a ball and set into prepared ice water for a few minutes before enjoying! Store in sealed container with reserved whey! Best if used within the week!
