biiig fan of nourish bowls in general, but this one miiight just be my favorite ingredients: —for the fish • salmon filet • taco seasoning • salt • evoo —for the rice • rice, cooked as usual • handful of cilantro, finely chopped • juice of a lime —for the corn salsa • 1-2 cups fresh or frozen corn • half a red onion, finely diced • handful cilantro, finely chopped • juice of half a lime • salt, to taste —for the crema • 2 scoops plain greek yogurt • 1-2 garlic cloves, grated • juice of half a lime • 1/2 tbsp. honey —toppings • avocado • pickled red onions • lime wedges • cilantro • pepper flakes instructions: • pat the filet dry, sprinkle with salt, then pat the taco seasoning all over until the flesh is evenly coated. heat your pan over medium heat and add oil. only once the pan is fully heated, place the filet flesh-side down, and let it cook for 2-4 mins. flip to skin-side down, and let it cook for another 5-6 mins (time will depend on thickness of filet and desired sear). • cook your rice as usual, then add in the cilantro and lime. • make your corn salsa and crema by combining the ingredients listed above in separate bowls. adjust the ingredients to your liking. • add the rice, salmon, and corn salsa to a plate. top with avocado, pickled red onions, the freshly made crema, cilantro, pepper flakes, and lime.
