The Hiroshima style okonomiyaki is an iconic street food originating from, you guessed it, Hiroshima! Kinda sloppy yet so delicious, Oppenheimer would've fought harder to not drop the bomb there. Maybe. [Batter Mix Ingredients] 1 premade dashi packet, 600ml water (or follow instructions on box) ~60g flour ~100ml dashi broth [Ingredients] Batter mix & dashi broth above. 1/2 handful of grinded bonito flakes ~150g cabbages Handful of bean sprouts Octopus leg (optional) Salt & pepper Handful of tempura crumbs 3 thin slices of pork belly 1 packet yakisoba noodles 1 egg [Toppings] Okonomiyaki sauce Aonori Chopped scallions 1. Make dashi broth using pre-made packet. 2. Make batter mix by mixing dashi broth & flour. 3. Heat & coat pan/plate with oil (low-medium heat). 4. Pour batter mix enough to make a thin circle of your desired size. 5. Lighly cover in bonito flakes, then pile on chopped cabbages. 6. Add bean sprouts, salt & pepper, tempura crumbs, pork belly, a little bit of batter mix. 7. Flip it over, add water along the edges and steam for a bit. Occasionally press down. 8. Meanwhile, cook a packet of yakisoba noodles & chopped octopus with a little bit of dashi broth. 9. Mix it up, make a circle, place the cake on top. 10. Crach open an egg to make a rough omelet, place everything on top. Flip it over. 11. Add the toppings (egg side on top).
