Season roast on all sides, then sear in cast-iron until all sides are brown. Removed from pan. Using the same pan add in the sliced onion and sauté for a few minutes. Add half of the onions to the bottom of the pressure cooker along with half of the peppers. Then add in the meat and the rest of the onions and peppers and juices on top. Next add in your garlic and beef broth. Pressure cook on low for an hour and a half.
