Pickled Radishes. Sooo good. Soooo easy. Here’s what you need: 16 ounces fresh radishes 2 tbsp kosher salt 2 tsp peppercorn kernels 1 cup distilled shite vinegar 1 uncooked fresh beet 1 fresh bay leaf (per jar) 2 serrano peppers (optional) Grab a 1lb bag of radishes and wash them super duper good. Trim the ends and set aside. In two 8 oz jars or one 16 oz jar add to the bottom a few slices of uncooked beets that have been thoroughly cleaned. Leave the skins on and drop a few slices in the bottom of the jar for flavor and color. Next add the radishes, and then add a Tablespoon each jar of Kosher Salt and a teaspoon of peppercorn kernels. Add some serrano peppers for heat (optional) and a bay leave. Top with half a cup of distilled white vinegar and then top off the jar with filtered water. Replace the cap and let sit for a few days. I bet you can’t eat just one!
