One of the easiest gameday burgers to make!! An Oklahoma Style Smash Burger using Pickled Red Onions is easily one of the best burger experiments I’ve tried yet!! Pickled Onion Ingredients: • 1.5 cups each ofWater and White vinegar • 1 tsp sugar • 1 tbsp salt • 1 tbsp whole peppercorns • 1-2 red onions, thinly sliced • 3-5 cloves of crushed garlic Burger ingredients: • 80/20 or 75/25 ground beef, formed into 3-4 oz balls • 1 - 1.5 tbsp of the pickled onions per burger • Burger seasoning of choice • American cheese • Yellow mustard • Dill pickles @Grillo’s Pickles • toasted potato or butter buns We have to start by making the pickled onions! These are easy and should be made 12-24 hours ahead of time! 1. Use a mandolin to thinly slice the red onions. 2. Add the water, white vinegar, salt, sugar, peppercorns, and any aromatics you prefer to the water and bring to a boil. Then set aside and let it cool slightly. 3. Place the onions into a mason jar, also adding a few cloves of crushed garlic throughout. 4. Pour the pickling liquid over the onions, seal, and pop in the fridge for atleast 12 hours Now to make the burger, follow these steps! 1. Heat up your griddle, I’m using my @recteq SmokeStone set to Med Hi heat. 2. Make sure you take out the onions needed from the jar, and pat them dry! We want to remove as much of the excess moisture as we can! 3. Place the beef down, then place a generous amount of the pickled onions on top of the burger before smashing down into the cooktop! 4. Season the burgers, and let these cook for about 2-3 minutes before flipping and covering with American cheese. 5. Once the cheese melts, carefully remove the Pattie’s and build your burger. 6. For my tests like this, I’m always keeping it simple with mustard and pickles for the toppings along with using a toasted potato bun! Enjoy and this one is really worth trying out!! :)
