I’ve been wanting to go to @pinkpistachiocafe for a hot minute now and have been vicariously living through all their posts. They’ve gotten popular really fast considering they’ve been open for only a little over a month now. While the vibes and ambiance are cute and “girly”, the food isn’t necessarily “dainty” as one would typically think. They’ve got a full ribeye steak, lamb chops, burgers too for everyone to enjoy, though, you will find more women here than men! lol My favorites were the pistachio latte, eggs benedict, ribeye steak, lamb chops, and nutella french toast. I’m a sucker for tres leches (it’s my favorite type of cake) and their rose one was very well-made, nicely soaked cake base that doesn’t disintegrate, and it’s not too sweet, which I know is considered as a compliment. 😂 You can also go here simply for tea time and light bites. They serve their teas in the cute teapot and glasses and have a large selection of herbal and caffeinated. This is like a halal version of Prince Tea House, but better lol. Chicken is by hand. All of my favorite winter childhood memories include Kashmiri Chai (Pink Tea). Whether it was a wedding or a family hangout, this would be brewing either in a thermos or a large pot. Life seemed perfect and carefree. Since my Nani is Kashmiri, I only drink Kashmiri chai with a hint salt. Tastes 10x better! Ingredients: 6 cups water  1 star anise  2, 1 inch sticks of cinnamon  3 cloves  4 cardamom  1 tbsp Kashmiri Chai loose leaf  1 tsp baking soda  Ice  1 cup milk Salt, chopped pistachios and dry rose petals for garnish  Instructions: In a pot add water. Add star anise, cinnamon sticks, cardamom and cloves. Bring the water to a boil. Then add loose tea & start mixing.  We call the process of whisking water by introducing air “phentna.” You want to throw tea from a height back in to the pot multiple times during Kashmiri Chai making process. It helps to enhance the flavor and brings out that beautiful hue to color pink thus why it’s called “Pink Tea.” When you have let the loose tea boil for 10 min on medium low flame, add baking soda. Make sure your pot is deep enough & you don’t over fill the pan. Baking soda will erupt like a volcano & will overflow if you have a lot of water. Keep mixing & introducing air during this time with a help of a ladle. Once the baking soda effects die down, add ice.  This step is crucial. You want to shock the tea by introducing cold to the hot liquid. It will immediately start enhancing the color & flavor of your chai. Cover the pot. So this isn’t necessary per se but I like to take advantage of the cold weather and leave my chai outside on my deck. It just happened to had snowed the night before so I rested my tea pot in it.  Honestly you can have your tea immediately as the flavor is there but since I am a true half Kashmiri through and through, I also enjoy drinking it for its color. At this point some people will use food coloring to get the color. Please don’t! Just let the Kawa completely cool down before adding milk to it.  As you can tell the next morning it was a solid piece of ice. This has never happened before! Worry not. You just introduce heat & bring the tea back to life. Strain all the loose tea leaves and whole spices. Once the tea boils, add milk.  Pay good attention to your tea from this point on. You need to let it come to a boil 4-5 times before turning off the heat. Pour the tea in a pot & share it with your friends & family. Ultimate recipe for the most perfect high tea.
