Pita Bread    3 1/4 cups of all purpose flour  1 1/2 cups of warm water  1 tablespoon yeast 1 teaspoon salt 1 tablespoon olive oil  In a large bowl put the water, yeast, sugar, oil and let it sit for 10 minutes then add the flour and salt. Mix the dough either by hand or mixer for 4 minutes. Put the little bit of olive oil in a bowl  place the dough in the bowl making sure the oil is lightly glazed with the oil and allow the dough to rest in a warm area covered with a warm towel for 2   hours. Once it raises remove from the now place it on top of a lightly floured surface and cut the dough into ball shape..  Place that in the oven or warm area for another 20 minutes to rise. Put flour on top of the counter and then start rolling them into flat circles like a disk. Let them rise for another 15 minutes. When you’re ready to cook them heat up the pan on a medium heat for about two minutes spray it with a little bit of oil spray, but clean it off with a napkin. Do you want it to be very light  go ahead and put the into the pan for about one minute, then flip it over for another minute. If it’s too late, then keep it on the pan for another minute on each side you’ll notice it start to fluff up and if there’s air pockets use the back of the spatula to help it rise remove from the pan and cover it with a towel once you’re all done eat them right away and these can last up to 2 to 3 days. Use what you prefer. Tzatziki Sauce: 1/2 Cup Plain Greek Yogurt  Garlic Lemon Zest / Juice 1 Tbsp Olive Oil Seasonings: Fresh Dill, Kosher Salt, Pepper, and Cucumber. Pickled Red Onions: 1/2 Red Onion 1/2 Cup Red Wine Vinegar  I didn’t use White Vinegar 1 Tbsp Sugar Pita: 1 Cup Bread Flour 1 Cup Plain Greek Yogurt  3 Tbsp Baking Powder Cooking Pita: Mix all ingredients together, flour your clean surface and knead dough. I cooked on cast iron on medium heat. When it bubbles you can flip it. Add all of your ingredients and enjoy! Congratulations! You just made yourself a delicious high protein and flavorful meal! 🥰

White Bean Dip with Olive Oil Drizzle of Dried Mint and Aleppo Pepper: Love making this for an easy get together or to make it and have it as a healthy vegan snack in my fridge. In addition to be enjoyed as a dip, it is also great to be used as a condiment for your sandwiches. The rich canvas of white beans absorbs beautifully the rich flavors and spices of Mediterranean ingredients.  Ingredients: For the Dip: •	2 cups cooked white beans (Even using cans, I prefer to recook them for another 15 minutes, to make sure it becomes very creamy.  •	3 tablespoons tahini •	4 tablespoons fresh lemon juice •	1 garlic clove, minced •	1 teaspoon salt (or to taste) •	1 teaspoon ground cumin •	A splash of water (if needed for consistency) Garnish  •	Fresh parsley leaves •	Generous amount of olive oil •	A sprinkle of sumac or more Aleppo pepper •	Toasted pine nuts or sesame seeds Instructions: 1.	Prepare the Dip: o	In a food processor or blender, combine the white beans, tahini, lemon juice, garlic, olive oil, salt, and cumin. (I use large guacamole mortar and pestle. Love the rustic coarse taste.) o	Blend until smooth, adding a splash of water if needed to achieve your desired creamy consistency. o	Taste and adjust the seasoning with more salt, lemon juice, or tahini as preferred. 2. Beef Arayes with Garlic Yogurt Sauce- these are so juicy and bursting in flavor. They are such a crowd pleaser always!  Ingredients:  1 lbs ground beef  1 medium yellow onion  1 tsp Aleppo pepper + more for dusting the pitas  1/2 tsp smoked paprika  3/4 tsp salt  1/2 tsp black pepper  1/8 tsp nutmeg  1/8 tsp cinnamon  2 tbs parsley, chopped  2 garlic cloves, crushed  The zest from 1/2 a lemon  3 small pitas  1 tbs olive oil, for brushing pita Yogurt garlic sauce  1 cup yogurt 2 garlic cloves  The zest from 1/2 a lemon  2 tsp lemon juice  1/2 tsp salt  1 tbs dill  1 tbs parsley  2 tsp olive oil  Method:  1. To make the yogurt sauce mix all ingredients above and set it aside;  2. Shred onion and wrap it paper towels to absorb its moisture; mix ground beef with the drained onion, garlic, parsley, lemon zest and all the spices; 3. Cut pitas in half and stuff them up, not too thick so they cook easy;  4. Brush olive oil on both sides, sprinkle Aleppo pepper and cook on a skillet on all sides;  5.
