Healthy Apple Pie Sweet Potato Boats 😍🍠🍎 Don’t you know that you can have a sweet treat without the refined sugar? Try these healthy baked sweet potato boats with an apple pie inspired crumble! It’s also drizzled with a homemade cinnamon infused maple syrup made with my @LĒVO infusion machine!😍  You can infuse a ton of recipes with spices and herbs outside of the ✨”magical herb”✨😉 that can be delicious for the whole family to share!  Sweet potatoes are packed with antioxidants, vitamin A, and healthy fats like walnuts for omega 3s, plant based protein, and vitamin B6 for my plant based people! 🙌🏽🌱 Ingredients⬇️ For the sweet potato 🍠⬇️ •4 medium sweet potatoes •1 tbsp olive oil or melted coconut oil •Pinch of salt For the Apple-Walnut Crumble •1 cup walnuts, chopped •1/4 cup roasted pistachios, chopped (optional) •1-2 medium apples, peeled, cored, and finely diced •2 tbsp almond flour or oat flour •1 tbsp infused cinnamon maple syrup •1/4 teaspoon nutmeg •1/2 tsp vanilla extract •1/8 teaspoon salt •1 tbsp melted coconut oil  Instructions 1. Preheat your oven to 400°F (200°C). 2. Wash the sweet potatoes and pierce them a few times with a fork. 3. Rub each sweet potato with oil and sprinkle with salt. Place on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a knife. 4. In a medium bowl, combine the walnuts, diced apples, almond flour, coconut sugar (if using), cinnamon, nutmeg, and salt. 5. Stir in the melted coconut oil until the mixture is evenly coated and crumbly. 6. Once the sweet potatoes are baked, let them cool slightly. Slice each one lengthwise, leaving the base intact so they can hold the filling. 7. Mash lightly with a fork and generously spoon the apple-walnut crumble over the top. 8. Lower the oven temperature to 375°F (190°C). Place the sweet potatoes back in the oven and bake for another 15-20 minutes, or until the crumble is golden and the apples are softened. 9.
