Sushi Board (Spicy Tuna)♥️ One of my favorite ways to serve it when I’m hosting! Perfect for Game Day or Galetines. Turns out SO good and its always the first thing to go. Ingredients: *• 2 cups calrose rice (washed well, cooked in a rice cooker with 2 1/2 cups water, kombu and salt. seasoned with 3 tbsp rice vin and 1 tbsp sugar). * 1 lb sushi grade tuna (finely chopped). * 2 tbsp japanese mayo. * 2 tbsp gochujang. * 1.5 tsp sesame oil. * 1 tsp mirin. * 1.5 tsp tamari. * 3 tbsp chives. * 2 large serranos (thinly sliced). * roasted nori sheets. * Togarashi to taste. * 2 persian cucumbers (thinly sliced). * 2 large avocados (sliced). * 2 tbsp black sesame seeds (more for topping). * 2 tbsp toasted sesame seeds (more for topping). Sauce: * 1 tbsp mirin. * 1 tbsp rice vin. * 1/4 cup tamari. * 1 lemon. * 1 scallion (chopped). Directions: 1. Once the rice cools, mix in the sesame seeds. 2. Chop the tuna pretty finely. 3. Add to a bowl with the mayo, gochujang, chives, sesame oil, mirin and tamari. 4. Line a sheet pan (I used a quarter sheet pan) with plastic wrap. 5. Add the tuna on the bottom, then the cucumber, avocado, togarashi, nori and finally the rice. Press pretty well with another plastic wrap piece. Chill for 10-15 min. 6. Add some parchment paper to the board you’ll be serving it in and flip it directly over. Add serranos and more sesame seeds on top. 7. Serve with the sauce and that’s it!
