Rotel Dip Pasta **Recipe** 2 lbs Ground beef 1 box Penne pasta 2 cans Rotel tomatoes 8 oz Cream cheese 8 oz Velveeta cheese 8 oz Sharp cheddar 8 oz Mozzarella 1 cup Heavy cream 1 cup low sodium chicken broth 1 Onion 1 Bell pepper 1 Taco seasoning packet Parsley Nature's seasoning Kinder's AP seasoning Smoked paprika Sour cream (for topping, if desired) Boil pasta according to directions on box. Cook ground beef and drain. Add seasonings, onion, and bell peppers. Cook until veggies are softened and add taco seasoning, tomatoes, velveeta, and cream cheese. Give it a quick mix and add heavy cream, chicken broth, handful of sharp cheddar and Mozzarella, and parsley. Stir everything together until well mixed and all Cheeses are melted down. Mix in pasta, add to a baking dish, top with remaining cheese, and bake on 375 for 15 to 30 mins.
