Jumbo Lobster Tails with Cowboy Butter to close up a year full of deliciousness 😋😋😋😋 Ingredients: 4 @lobsteranywhere Jumbo Lobster Tails 2 tbs butter, melted 2 tbs olive oil 1/2 tsp salt 1/4 tsp black pepper Chives, for garnish Lemon wedges Cowboy butter: 1 stick of butter 1 tsp smoky chili flakes 1/2 lemon, juiced 1 tbs Dijon mustard 1 small shallot 2 garlic cloves 1 tbs parsley, chopped 1 tbs chives, chopped 1/2 tsp salt 1/2 tsp black pepper Method: 1. Preheat oven to 425 F; 2. Remove the top shell of your lobster tails, de-vein and wash lobster tails; pat dry and brush with a mix of melted butter, olive oil, salt and pepper all over and roast for about 12 minutes or until internal temperature registers 130-135 F; 3. To make the cowboy butter- add 7 tbs butter to a pot and cook chopped shallot for 2 minutes, the add chopped garlic, Dijon mustard, lemon, smoky chili flakes, parsley, chives, salt and pepper; 4. Once lobster tails have cooked- brush them generously with the cowboy butter, top with chives and enjoy! Happy New Year!
