Succulent Lobster Scampi with Garlic Crostini is the appetizer you need to ring into the New Year with 😋😋😋 Ingredients: 1 lbs @lobsteranywhere raw lobster meat (claw and knuckle) 5 tbs butter 2 tbs olive oil 5 garlic cloves, crushed 1/2 cup white wine 1 lemon, juiced 1/2 tsp salt or to taste Black pepper 1 tbs fresh parsley chopped 2 tsp chives Garlic rubbed baguette crostini, for serving Method: 1. Defrost and rinse lobster meat, pat it dry and sauté in 2 tbs olive and 2 tbs butter, season with salt and pepper, cook for a few minutes and set it aside; don’t overcook it or it will get rubbery; 2. Into the same pan, crush some garlic and cook until fragrant, add wine and lemon juice; reduce half way; add the rest of the butter, let it melt, bring lobster meat back into the pan and cook for 1-2 minutes; adjust salt and pepper; 3. Finish with parley and chives; serve with garlic rubbed crostini and enjoy 😋
