Elevate your dinners this year with my Creamy brown butter and lemon seafood Linguine using the @Tramontina USA 10-inch Tri-Ply Clad Fry Pan with Ceramic Nonstick Interior. This pan is perfect for delicate seafood and also limiting the use of cooking oils for frying. The ceramic nonstick interior also allows for easy clean up which comes in handy during the busy new year.  Ingredients (servings 2) 8 oz. Linguine  1/2 lb Scallops (6-8) 1/2 lb Deveined Shrimp (8-10) 3 garlic cloves minced 1 shallot minced 4-5 Sprigs of Thyme  1/4 Cup Parsley 1 lemon halved 1/3 Cup Dry White Wine 1 Cup Heavy Cream  3 tbsp Unsalted Butter  Pasta Water  Salt and Pepper  Pinch of Red Pepper Flakes  Paprika Olive Oil  How to make:  Bring a large pot of salted water to a boil.  Pat scallops dry with a paper towel. Season with salt and pepper.  Season the shrimp with salt, pepper and paprika.  Using the tramontina 10-inch Tri-Ply Clad Fry Pan with Ceramic Nonstick Interior on medium high heat add a small amount of olive oil. Sear the scallops on one side for 3 minutes. Flip. Place the lemon halves face side down. Cook the scallops for 2 minutes more or until they are no longer opaque. Remove and set aside. Cook shrimp for 2 minutes per side or until no longer opaque. Remove the lemons from the pan once they have a nice caramelization. Once shrimp are cooked use 1 charred lemon half and squeeze over the shrimp. Remove and Set aside.  To the same pan on medium heat add 3 tbsp of butter. Melt the butter and continue to stir allow the butter to sizzle. Once butter is foaming and brown bits are at the bottom drop the heat to medium low, add shallots and garlic. Cook for 3 minutes. Add a pinch of red pepper flakes. Pour in dry white wine. Bring to a simmer. Once simmering squeeze in the remaining half of the charred lemon. Simmer and reduce by half. Once reduced add heavy cream and thyme. Simmer gently to thicken (3-4 minutes). Add al dente linguine and a ladle of pasta water. Toss until sauce clings to the pasta. Finish with parsley and add back in the cooked seafood.  Garnish with extra parsley and a drizzle of olive oil. Crawfish Pasta🔥 Recipe👇🏾 -Chop 1/4 of a green bell pepper, red bell pepper, yellow bell pepper and white onion and chop 1.5 stalks of celery into small pieces  -Rinse 12 oz of cooked crawfish tails -Melt one stick of salted butter in a skillet  Add in veggies and stir. Boil around 8 -8.5 oz of pasta in salted water , I used Mafaldine.( click link in my bio and checkout my Amazon store if you want to purchase the kind I used ) Also, reserve around 1 cup of pasta water for later  -Add 1 tbsp of minced garlic to veggies , add in crawfish tails Season to taste with Crab boil seasoning, smoked paprika, onion powder, roasted garlic seasoning , cayenne pepper ( optional ), a little old bay seasoning and black pepper. -Add in 2.5 c. Heavy cream, stir for 2-4 minutes. Add in 1.5 c. Shaved Parmesan cheese and 1/4 of garlic and fine herbs Boursin cheese and 2-3 handfuls of shredded Monterey Jack cheese.  -Once cheese has melted add in a little pasta water and taste. Add in a little more old bay but you don’t have to if you are satisfied with the taste.  -Add in pasta noodles and mix with sauce. Salt, pepper, old bay, garlic powder, crushed red pepper flakes. Breadcrumbs- add 1 tablespoon of butter to a pan and melt on low. Add in Panko breadcrumbs and mix together. Then drizzle in Calabrian chili oil and mix again. Toast on low until golden brown. Pasta- Add a few tablespoons of olive oil to a pan and heat up. Then add in chopped shallot and garlic and sear for a few minutes.  (Open both cans of clams and separate the juice from the clams.) Next add in the juice from the clams, 1 tablespoon of crushed red pepper flakes. Let everything simmer for a few minutes. Next to add and diced tomato, the clams, and fresh parsley. Let everything simmer for another 2 to 3 minutes. Then add in 4 tablespoons of butter, the juice of one whole lemon. Season with old bay seasoning, salt, pepper, garlic powder. Cook pasta until it’s 90% done, then add into the clam mixture along with 2 cups of pasta, water, to cook the rest of the way.  Top with fresh Parm cheese, and the Calabrian chili breadcrumbs.
