Sheet Pan Cottage Cheese Crust Pizza  As someone who is trying to increase protein in my everyday meals, this one feels too good to be true. I’m not sure how eggs + cottage cheese = a pizza crust, but I’m telling you it works! If you don’t like cottage cheese, I realllllly don’t think you would even know it’s in this recipe. Listen, nothing will ever replace actual pizza, but this is a great “healthy” option if you’re looking to try a new recipe! Ingredients  •1 C cottage cheese •1 egg + 1 egg white •kosher salt •1/4 C grated parm •1/2 C shredded mozzarella •red sauce (I like using passata) •other toppings •avocado oil spray    Recipe 1. Preheat oven to 400 2. Blend your cottage cheese, eggs, parm & a pinch of salt until smooth 3. Line a baking sheet with parchment & make sure to spray with avocado oil  4. Evenly pour & spread the cottage cheese batter onto parchment in shape of rectangle  5. Bake for 15-20 min, until the edges start to turn brown 6. Remove from oven & let sit for a couple min. Carefully flip over.  7. Bake for about 7-10 min. *see notes 8. Let sit for a couple min, then flip again. Top with a light amount of sauce, then add cheese, & toppings.  9. Bake for about 5 min until cheese melts. Give me a 30 minute meal any day of the week! This “Balsamic Chicken & Veggies” from Mel’s Kitchen Cafe is out of this world delicious! AND all four of my kids inhale it. 🥦🫑 ✨Balsamic Chicken & Veggies✨ * 2 small zucchini, cut into 1-inch pieces * 1 - 2 small yellow squash, cut into 1-inch pieces * 1 bell pepper, cut into 1-inch pieces * 1 red onion, cut into 1-inch pieces * 1 head of broccoli, cut into pieces * 2 boneless skinless chicken breasts, cut into thin strips * ⅓ c balsamic vinegar * 3 Tbsp avocado oil * 1-2 Tbsp honey * 1 tsp dried basil * ½ tsp dried oregano * 1 tsp salt * ½ tsp pepper Preheat the oven to 400° F. Put all cut veggies and chicken strips on sheet pan. Mix the rest of the ingredients in a bowl. Pour over veggies/chicken. Toss everything together until evenly coated. Bake for 12-15 minutes until the vegetables are soft and chicken is cooked through. Serve with rice, quinoa, or pasta. SHEET PAN TERIYAKI CHICKEN 🍗🥦🍚 Tonight’s dinner is quick, healthy, and tastes just like takeout! 🍽️ This recipe is from my new meal planning app, Planned which has over 250 high-protein, healthy meals to help make healthy eating delicious and stress-free! 🙌 This recipe makes 3-4 servings: What you need: - 1 cup rice  - 2 cups water  - 1/2 cup soy sauce or coconut aminos - 2 tbsp honey - 2 tbsp rice vinegar (I forgot to say this in the video!) - 1 tsp sesame oil - 2 tsp minced garlic - 2 tsp tsp minced ginger - 1/2 tbsp cornstarch - 1 tbsp water - 4 cups broccoli florets  - 1 tbsp olive oil - 6-8 boneless, skinless chicken thighs - Sesame seeds & diced green onions How to make it: - Preheat oven to 400F. - Add rice and water to a saucepan, cover with a lid, and bring to a boil. Once it is boiling, turn heat down to low and simmer until the water is absorbed (or use a rice cooker). - In a small saucepan combine soy sauce, honey, rice vinegar, sesame oil, garlic and ginger and bring to a boil. - Turn the heat down to a simmer. Mix together cornstarch and water until smooth, then slowly add to the saucepan while whisking the sauce. Simmer for 2-3 mins whisking often until the sauce thickens. Remove from heat and set aside. - Pour 1/3 of the teriyaki sauce into a small bowl to save for later.  - Add broccoli florets to a large sheet pan and toss in 1 tbsp olive oil. Drizzle on about 1/3 the teriyaki sauce and toss to coat. Push to one side of the pan. - Add chicken thighs and spoon the last 1/3 of the teriyaki sauce over the top. - Bake for 30-35 mins, tossing the broccoli and flipping the chicken halfway. INGREDIENTS:  - 1 medium sized white onion  - 1 pound of ground beef  - 7-8 Tortillas (I’m using @Siete Foods )  - Olive oil for cooking  - 3-4 cloves garlic (minced)  - 1/2 tsp ground cumin  - 1/2 tsp onion powder  - 1/2 tsp oregano  - 1/2 tsp smoked paprika  - 1/2 tsp chili powder  - 1 tbsp tomato paste  - salt + pepper  CHIPOTLE CREMA:  - 2-3 tbsps sour cream (I’m using dairy free @Forager Project)  - 1/4 tsp chipotle powder - Splash of water *you can also add lime juice if you wanna get crazy with it !!  TOPPINGS: (whatever your heart desires)   - Diced Roma tomato  - Shredded lettuce  - Cilantro  - Chipotle crema (listed above)  INSTRUCTIONS:  - Start by preheating your oven to 400. - Dice your white onion, set aside for now.  - In a skillet over medium heat, add a splash of olive oil. Add in your diced onion and stir until just softened (2-3 minutes)  - Add your ground beef into the same pan. Break it up til it’s brown you know the drill.  - Once it’s about halfway browned, season generously with salt and pepper. Add in your minced garlic. Mix mix mix  - Then add your cumin, onion powder, oregano, smoked paprika, chili powder and tomato paste. Mix mix mix  - When the meat is fully browned and the seasonings are well combined, remove from heat, cover and set aside for now.  - In a small skillet over medium heat, add a splash of olive oil. Heat up your tortillas about 20-30 seconds per side, or until they are fully softened. - Line your pan with parchment paper, add your tortilla to the pan, fill with our meat mixture. Sheet pan gnocchi, sausage, and burrata for my gf 💙 A super simple <5 ingredient dinner that I make often when I’m feeling lazy. The tomatoes burst when roasted to create a sauce in combination with the creamy burrata. The gnocchi doesn’t need to be cooked beforehand. It all tastes like pizza in a bowl and it’s so so comforting.  INGREDIENTS 1 package gnocchi 2 packages spicy Italian chicken sausage (Trader Joe’s) 1 pint cherry, grape, or mini heirloom tomatoes Salt & pepper Garlic powder Oregano 2 balls burrata Preheat oven to 420°F.  Add gnocchi, tomato, and sliced sausage to a sheet pan. Sprinkle with salt, pepper, oregano, and garlic powder. Add a few tbsp olive oil and toss to coat. Cook for 40 minutes, tossing halfway through. As soon as it comes out of the oven, rip up the burrata and add it to the sheet pan. SHEET PAN CHICKEN FAJITAS 🌮🌶️🌿 I loveee this dinner! It’s so easy - all you do is slice up the veggies and chicken, toss it in the flavor packed taco seasoning, and bake! It’s so delicious, high in protein, and takes 30 mins to make!  This recipe makes 4 servings! Ingredients: - 2 bell peppers - 1 red onion  - 1.5 lb chicken breast  - 1 tbsp olive oil  - 1 packet taco seasoning or homemade seasoning (see below) - 8 flour tortillas  - Cilantro for garnish  Homemade taco seasoning: - 1 tbsp chili powder - 1 tsp ground cumin  - 1 tsp salt  - 1/4 tsp black pepper  - 1 tsp paprika - 1 tsp garlic powder  - 1 tsp onion powder  - 1/4 tsp cayenne pepper - 1/2 tsp dried oregano  Cilantro yogurt sauce:  - 1/2 cup plain Greek yogurt  - 2 tbsp lime juice  - 1 tsp minced garlic  - 1/2 cup cilantro leaves  - 1/4 tsp salt - 1/8 tsp black pepper  - 2 tbsp water  How to:  - Preheat oven to 425F.  - Thinly slice bell peppers, onion and chicken breast. - Add to the sheet pan with olive oil and taco seasoning. Italian Sheet Pan Chicken - an easy Mediterranean Diet recipe you can make in 30 minutes or less!
