Ingredients: Chicken Thighs - 4 @Cholula Hot Sauce Chipotle Taco Mix - 1 Bell Peppers - 4 Onion - 2 Taco Seasoning  Olive Oil Flour Tortillas  @Birds Eye Fire Roasted Corn Elote Seasoning  Jalapeño - 1 Sour Cream - 1 1/2tbsp @Goya Oficial Yellow Rice  Directions: 1. Start by prepping the veggies and chicks. Thinly slice four bell peppers and two onions. Add to a large bowl and season generously with olive oil and taco seasoning. Give it a mix  2. Then thinly slice the chicken thighs and add the Cholula Chipotle Seasoning packet and olive oil. Mix until well coated. Allow to marinate for at least 30mins. I did mine overnight.  3. Throw the peppers and chicken on sheet pans lined with foil and bake at 425 for 35mins. Remove and mix around and then cook for another 25mins and broil for 3-5mins.  4. While that cooks I used Goya Yellow rice and cooked it according to the box instructions. I also made an easy corn salsa with one bag of fire roasted corn. Heat corn in a pan with some butter and then add in one diced Jalapeño, Elote seasoning and about 1 1/2tbsp sour cream. Mix to combine.   5. What you’ll need: ✨ Cooking spray - 4 sprays ✨ Refrigerated hashbrowns - 20 oz ✨ Olive oil - 1 Tbsp ✨ Red onion - 1 small, thinly sliced ✨ Garlic powder - 1½ tsp ✨ Kosher salt - 1 tsp ✨ Black pepper - ¼ tsp ✨ Egg - 6 large ✨ Reduced-fat cheddar cheese - ¾ cup, shredded ✨ Chives - 2 Tbsp, chopped How to make it: 1. Preheat the oven to 425°F. Line a large sheet pan with parchment paper and lightly coat with cooking spray. 2. In a large bowl, toss the potatoes, oil, onion, garlic powder, salt, and black pepper until well combined. Spread into an even layer on the prepared pan. 3. Bake the potatoes until the edges begin to brown, 25 to 30 minutes. Lower the oven temperature to 400°F. Using a spoon, make 6 wells in the potatoes and crack 1 egg into each well. Return the pan to the oven. Bake for 8 to 9 minutes more for runny yolks or 10 to 12 minutes more for firmer yolks. 4. Sprinkle the cheese over the potatoes. Return the pan to the oven to melt the cheese, about 30 seconds.
