Smoky, braised short rib Tiki Tiki tacos topped with sweet and spicy pineapple pepper salsa on the KJ!🔥 🌮 📸 @smokenvine Full Recipe ⬇️: Ingredients: • 3lbs boneless beef short ribs • Beef Rub • Smoked Garlic Jalapeño Lager Beef Rub • Umami Punch Rub • Tortillas • Limes (for serving) Marinade: • 1/3 cup brown sugar • 1 tbsp minced ginger • 2 tbsp chopped garlic • 2 tbsp soy sauce • 1 tbsp hot sauce • 2 tbsp tiki tiki sauce • 1 tbsp sweet chili sauce • 8 oz pineapple juice • 8 cups water Pineapple Salsa: • 1/2 pineapple, diced • 1/2 onion, diced • 1 jalapeño, diced • 1 red bell pepper, diced • 1 orange bell pepper, diced • 1/4 cup green onions, chopped • Juice of 1 lime Instructions: 1. Marinate the Ribs: Combine all marinade ingredients. Reserve half and pour the rest over the ribs. Marinate overnight. 2. Smoke the Ribs: Pat the ribs dry and season with the rubs. Smoke at 250°F for 4 hours, spraying hourly with the reserved marinade, until the internal temperature reaches 165°F. 3. Braise: Heat the reserved marinade in a Dutch oven. Add the smoked ribs and cook until tender (about 2 hours). 4. Prepare the Salsa: Combine all salsa ingredients in a bowl. 5. Assemble Tacos: Shred the ribs, warm the tortillas, and assemble tacos with the pineapple salsa. Serve with lime wedges. Enjoy!
