Smoky, braised short rib Tiki Tiki tacos topped with sweet and spicy pineapple pepper salsa on the KJ!🔥 🌮 📸 @smokenvine Full Recipe ⬇️: Ingredients: • 3lbs boneless beef short ribs • Beef Rub • Smoked Garlic Jalapeño Lager Beef Rub • Umami Punch Rub • Tortillas • Limes (for serving) Marinade: • 1/3 cup brown sugar • 1 tbsp minced ginger • 2 tbsp chopped garlic • 2 tbsp soy sauce • 1 tbsp hot sauce • 2 tbsp tiki tiki sauce • 1 tbsp sweet chili sauce • 8 oz pineapple juice • 8 cups water Pineapple Salsa: • 1/2 pineapple, diced • 1/2 onion, diced • 1 jalapeño, diced • 1 red bell pepper, diced • 1 orange bell pepper, diced • 1/4 cup green onions, chopped • Juice of 1 lime Instructions: 1. Marinate the Ribs: Combine all marinade ingredients. Reserve half and pour the rest over the ribs. Marinate overnight. 2. Smoke the Ribs: Pat the ribs dry and season with the rubs. Smoke at 250°F for 4 hours, spraying hourly with the reserved marinade, until the internal temperature reaches 165°F. 3. Braise: Heat the reserved marinade in a Dutch oven. Add the smoked ribs and cook until tender (about 2 hours). 4. Prepare the Salsa: Combine all salsa ingredients in a bowl. 5. Assemble Tacos: Shred the ribs, warm the tortillas, and assemble tacos with the pineapple salsa. Serve with lime wedges. Cozy Comfort Food | Part 1 | Braised Short Rib Lasagna This has become one of my signature dishes and my absolute favorite to make when its cold outside. Enjoy! ~ Ingredients ~ - Beef Short Ribs - 2 Carrots  - 1 Yellow Onion - 3 Celery Ribs - 4 Gloves of Garlic - 2 tbsp of Tomato Paste - White Wine (1 Cup) - 32oz Can of Plum Tomatoes - Mozzerella (Shredded) - Parmesan (Grated) - Bechamel  - Pasta Sheets (I prefer homemade) ~ Recipe ~ - Season Short Ribs with Salt and Pepper. In a large Dutch Oven. Brown all sides and remove.  - In the same pot, add in Onion, Carrots and Celery (all should be finely chopped). Cook until soft and fragrant.  - Add in Garlic and cook another 2min - Mix in Tomato Paste, cooking approx 2min. Then mix in Wine and allow the alcohol to cook off.  - Stir in Plum Tomatoes. Optional to crush them beforehand.  - If you have some, add in Parmesan Cheese Rind and a Bay Leaf - Add back in Short Ribs and cook in the oven at 300F for approx 2 and a half to 3 hours.  - Remove Short Ribs from the sauce.  - Shred meat apart and remove any chewy fat and bones. Add back to the sauce and cook low for approx 30min while you prep everything to layer the lasagna.  - In a baking dish, layer as follows - Sauce - Pasta - Sauce - Bechamel - Mozzerella - Parmesan - Pasta -  - Continue layering.  - Wrap in Foil and add to a 375F oven for 30-40min - Remove the foil and bake another 10-15min - Once removed from oven, let settle for 15min before serving - Bon Appetito!  #lasagna #pasta #freshpasta #shortrib #shortriblasagna #homemade #sundaydinner #comfortfood #cozy #CapCut
