Ahhh February, the short month, the month that brings us closer to spring up here in the northeast. The month that finds days gradually getting longer with a little more sunlight every day it’s also the month where we celebrate love and what better way to celebrate. Love them with a sweet treat. . A couple of things to keep in mind.. all of the ingredients in this recipe are plant based, you can use a traditional oven as well , you may just have to play around with the cooking times. This recipe was adapted from a recipe I saw on social media, but during the craziness of this weekend , I lost her page and cannot credit her.  🌱Single Serve Cinnamon roll(high protein)🌱 Ingredients: 1/3 cup self rising flour 1/3 cup plain greek yogurt  1 tablespoon butter , room temperature  1  teaspoon cinnamon 1 tablespoon date syrup  1 tablespoon cream cheese  1 tablespoon milk  1 teaspoon vanilla extract 1 teaspoon super fine sugar In a small bowl, add the yogurt and flour and stir until well combined. Place the dough onto a lightly floured surface. Flatten the dough into a roughly rectangle shape. In another small bowl, whisk together the butter, cinnamon and date syrup In a separate bowl, stir together butter, sugar, and cinnamon. Place the mixture in the dough and spread it evenly . Cut the dough into 4 long strips. Roll each strip , attaching it to the prior roll until one giant roll is formed.  Place the roll into a lightly greased ramekin. Easy Sourdough Discard Pizza🍕 This pizza is the perfect way to use up sourdough discard/starter—no kneading, no dishes, just pure deliciousness! Ingredients: •Sourdough discard •Avocado or olive oil spray •Salt •Pizza sauce •Mozzarella cheese •Toppings of choice (I used pepperoni and chicken sausage) •Fresh basil (for garnish) Instructions: 1. Preheat the oven to 375°F, placing a cast-iron skillet inside to heat. 2. Once preheated, carefully remove the skillet and spray with avocado/olive oil spray.  3. Pour in the sourdough discard, spreading it evenly to cover the pan. (The more you add, the thicker your crust!) I added a little extra around the edges for a thicker crust.  4. Drizzle with olive oil and sprinkle with salt. 5. Bake for 15-20 minutes, depending on your desired crispiness. (I go for 20 minutes for an extra crispy crust.) 6. Remove from the oven and add your sauce, cheese, and toppings. I added mozzarella, pepperoni, AppleGate chicken sausage.  7. Bake for another 5-6 minutes, or until the cheese is melted and bubbly. 8.
