Trim excess fat and any silver skin. 2. Slice across the grain at a 45-degree angle into thin slices. Make the Marinade: 3. Mix dark soy sauce, regular soy sauce, minced garlic, lemongrass, and sugar. 4. Whisk until the sugar dissolves, then slowly add sesame oil. Marinate the Steak: 5.
