Recipe is on my blog: yourstrulyani.com — linked in my bio. Traditionally made with phyllo dough, this version uses puff pastry for easier assembly—and it’s just as delicious. I hope you love it as much as I do! #spanakopita #puffpastry #puffpastryrecipes#greekcuisine #greekfoods #greekfood #σπανακόπιτα #greekrecipes #greekrecipe #spinachpie #vegetarian #vegetarianrecipes #vegetarianrecipe #vegetarianfood #armenian #armeniangirl #հայկականխոհանոց #հայկական #ethnicfood #recipeshare #recipevideos #simplyrecipes #foodblogger #festivebaking #mediterranean #mediterraneanfood #mediterraneandiet #christmas #christmasrecipes #christmasrecipes

Four bags of frozen spinach or four bunches of fresh spinach six eggs, 6 teaspoons of dillweed parsley, 2 teaspoon of pepper. 2 pounds of Fata the Roussos ‘s brand you can find it in any Mediterranean Greek supermarket, one small jar of ricotta, 2 teaspoons of mascarpone, half of a yellow onion, diced and chopped very small three bunches of green onion. Make sure to cut the ends and chop them very very small. Mix all the ingredients together in a bowl first make sure you rinse the spinach squeeze out the juice and then chop it up, completely crack all of your eggs with all the other ingredients in the bowl, putting everything together and mixing it with your hands preferably wear gloves when you squeeze out the juice so your hands don’t itch. It is very important to get all the juice from the spinach out and rinsed it completely till it’s clear Once you do that and you mix all the ingredients start laying down the Filo dough get a large tray half a cup of olive oil and a brush you’re gonna go ahead and put a little bit of olive oil at the bottom of the pan for each sheet of Filo dough. You’re gonna lay a thin layer of olive oil. I usually do 56 pieces on the bottom And 56 pieces on top depending the side of the tray. If it’s a large tray, I would use seven pieces the flake year of the crust of the Dell the better it is lay down your pieces of Philo then take your mixture and evenly spread it all over for the top layer. Do the same thing you did to the bottom layer, one piece of Filo dough little bit of olive oil. Keep repeating until you have your layers all done while you’re doing that. Make sure the oven is preheated to 375 take a large knife you’re gonna cut all the way across and all the way diagonally but not all the way through. You’re gonna cut halfway through once you’ve made your crisscross pattern halfway through on the whole entire tray pop it in the oven For about an hour until it’s medium light to medium golden brown you do not want to get too brown keep an eye on it and check it anywhere from 45 minutes to an hour and it should be done and there you have spinach pie. Trust me you will thank me later. Enjoy bon appétit
