Homemade Stevia Extract from the garden!  . Yup, growing sugar cane may not be an option for the average gardener but growing stevia is!  Now I know, a lot of us have had bad experiences with the strong bitter notes that commercial stevia typically has.  Homegrown stevia is a lot less on the bitter side and more on the earthy sweet side though!  . I sow my stevia seeds in Jan/Feb if I want to grow more outside of my already established patch. The seeds are super small and do well sowed just on the surface on a seedling pot!  I spritz with water for a few days until tony sprouts emerge and I watch them closely for 4-6 weeks. Then transplant them out into the garden in an area that is full sun with preferably afternoon shade (like just about everything that thrives in a Texas garden lol)  . Tips to avoid bitter notes being stronger:  Steep for 4 days or even less in the spirits. Reduce the vapors by stirring the extract in a ventilated area but on very very low heat for a short amount of time just until the alcohol smell is gone. OR, make a decoction with distilled water by steeping the stevia leaves fresh as a tea and straining to store in your fridge for 3-4 weeks at a time.  If you harvest all at once you can keep dried stevia leaves on hand for regular decoction as well!  . When using powdered stevia consider that 1/32 of a tsp equates to the sweetness of 1 tsp of sugar! To round out your sweetness in a baked good you can try adding a reduced sugar amount or using less honey/maple syrup and adding a pinch of stevia to reduce glycemic load!  #stevia #gardenharvest #gardentok #gardenrecipes #gardentotable #keto #texasgardening
