🍥Cinnamon Swirl Bread🍥 Dough:  - 75g sourdough starter, ripe (fed) or discard - 3 cups (360g) All Purpose Flour  - 2 1/2 teaspoons Active Dry Yeast - 1 Tablespoon Sugar  - 1 1/4 teaspoons (8g) Salt - 1 large egg - Salted Butter, softened - 2/3 cup (152g) Water @ 110 degrees  Filling: - 1 Tablespoon Water - 1 Egg - 1/4 Cup Brown Sugar - 1/4 Sugar  - 1/2 Tablespoon Cinnamon  - 1 Tablespoon Flour Directions:  1. Mix all the dough ingredients into a bowl. Mix until smooth either using a rubber spatula and then your hands, or a stand mixer with a dough hook.  2. Lightly cover a bowl in oil. Form the dough into a ball. Let her rise until doubled in size about 1.5 hours in the winter and 1 hour in the summer.  3. Whole dough rises combine the filling ingredients into a bowl and mix. Set aside.  4. Once dough has double in size, GENTLY roll it out onto a lightly greased counter top.  5. Once the dough is about 6x20, mix the water and egg together, then lightly brush the dough with egg mixture.  6. Sprinkle the filling on top of the leaving about an inch or two at the end.  7. Roll the dough gently like you would cinnamon rolls. Tuck both ends under each other and set into a lightly greased bread pan that also has been lightly floured on the bottom. We don’t want the bread to stick to the pan.  8. Let the dough rise for another 1.5 hours.  9. Preheat oven to 350. Bake the bread for 15 minutes and then tent with tin foil. Continue to bake for another 30 minutes.  10. Take bread out of the oven and use a knife to cut the sides away from the pan. Flip onto a cooling rack. Let rest for one hour before slicing in. 11.
