Sour cream chives INSTRUCTION: 1) preheat oven to 400. on a cookie sheet, coat potatoes in olive oil, salt, pepper, onion powder and garlic powder. Toss to cover completely and bake for 30 minutes or until potatoes are soft inside 2) once potatoes have baked (and cooled enough to handle). Slice each potato in half. Use a small spoon or teaspoon to scoop a hole from the top of each half. Add scooped out potato to a bowl with cheddar cheese, butter, bacon bits, heavy cream, salt & pepper. Mix well and scoop mixture back into potatoes. Bake for another 10ish minutes - until insides are melty and potato skins are crunchy. 3) pipe sour cream onto potatoes, then add remaining bacon bits & chives. Serve and enjoy!
