🌮One Pan Taco Casserole🌮 Recipe is written below and spoiler alert! There’s over 200g protein in the whole thing! Ingredients: 2lbs ground beef 1/2 large onion, diced 3 cloves garlic Olive Oil/Avocado Oil 1 tsp smoked paprika 1 tsp cumin 1/2 tsp coriander 1 tsp chili powder 1/2 tsp dried thyme Salt & pepper 6oz cream cheese 1/2 cup chicken broth 1 bag of cauliflower rice 5oz cheddar cheese, shredded Toppings: Lettuce Jalapeños Sour cream Tomato (optional pico de gallo) Lime Directions: Preheat oven to 350F. Finely dice 1/2 an onion and the garlic. Add that to a pan over medium heat along with some olive oil. Give it a stir and cook for a few minutes until it becomes a little translucent. Make the taco seasoning by mixing all the seasonings up in a small bowl, then put the ground beef in the pan with the onions and pour the seasoning over top, then add salt and pepper and give it a good mix up. Cook it until it’s starting to brown a little bit. Break up a bag of cauliflower rice with the back of a knife or a wooden spoon, then pour that in the pan with the beef. Add the bone broth, break that up, and let it unthaw in the pan. Next add the whole block of cream cheese bit by bit around the entire pan. Stir to combine. Pop the pan into the oven uncovered for about 10 minutes, then take it out and top it with the shredded cheddar cheese. Turn the oven on broil and add the pan back in uncovered so the cheese melts. Make sure to keep watch during this step as you don’t want to over melt the cheese and burn it. Take the pan out, let it cool for about 5-10 minutes, add your toppings, and dig in with a chip or a spoon!
